Sweet Christine and I are headed to meet Jan&Mike from the forum at the Jimmy Buffet concert at Nissan Pavillion. I'm thinking meaty skewers on the grill with coconut rice. If we don't reach too altered a state before the concert we'll take photos.

although I love our local Mexican place. It's very good and fresh but still.... yours looks great.
we had a spinach con queso last night. very good. but they make theirs on a black skillet so its not so much a dip as a .... hmm can't even think of a word for it. just melted goodness!

MB, that looks and sounds delicious. I love Chiles Rellenos, but have never tried fixing them. I'm glad you included the recipe. I couldn't figure out what was sticking out of the sides.

The thai basil is also huge. Any suggestions for using that stuff, maybe with some fresh ginger and garlic or something, either in a dressing or or a saute with some veggies or chicken?

CG, the salsa is really easy. Broil 8 ounces tomatillos with as many jalepenos as you want (I used four), until blackened on all sides. Stem them and put them in a food processor along with all of the juices that accumulated on the pan. Blend with a handful of cilantro until relatively smooth. Stir in one onion, chopped, that has been rinsed under cool water. Taste for salt. That's it!
