Sweet Christine and I are headed to meet Jan&Mike from the forum at the Jimmy Buffet concert at Nissan Pavillion. I'm thinking meaty skewers on the grill with coconut rice. If we don't reach too altered a state before the concert we'll take photos.

I made mexican food last night...way too much of course. I was cooking for four but made enough for about 10.

Now you're talkin' my language! That all look amazingly good! My favorite Mexican restaurant is old style home cooking and you just put them to shame! Recipe please for the tomatillo-chile salsa! (I'll have to go light on the chiles though.)

omg we went out for Mexican last night but I should have come to your house! YUM
although I love our local Mexican place. It's very good and fresh but still.... yours looks great.

we had a spinach con queso last night. very good. but they make theirs on a black skillet so its not so much a dip as a .... hmm can't even think of a word for it. just melted goodness!

MB, that looks and sounds delicious. I love Chiles Rellenos, but have never tried fixing them. I'm glad you included the recipe. I couldn't figure out what was sticking out of the sides. :lol:

It was really delish and a veggie dish to boot! :)
I think it was intended as a side (?) but I used it as a main w/ some tomatoes and cukes on the side.

Hmmm. Don and I just made a quick trip to San Diego to get our Mexican food fix; I'm guessing Casa Liamsaunt or Casa MBW would have been a lot quicker :lol:

Yum thats some good inspiration for all the peppers I got in the garden.

The thai basil is also huge. Any suggestions for using that stuff, maybe with some fresh ginger and garlic or something, either in a dressing or or a saute with some veggies or chicken?

I saw a nice recipe using Thai basil - none of which I have. It was some sort of meat roll on a skewer that gets wrapped in a thai basil leaf. it looked yummy! I will see if I can find it again.

Yum, we've grown Ancho's the last few years and they do well. I'll need to try that recipe.

Our Anchos are starting to turn color and getting pretty red. I want to dry the red ones to make ancho powder for chili.

CG, the salsa is really easy. Broil 8 ounces tomatillos with as many jalepenos as you want (I used four), until blackened on all sides. Stem them and put them in a food processor along with all of the juices that accumulated on the pan. Blend with a handful of cilantro until relatively smooth. Stir in one onion, chopped, that has been rinsed under cool water. Taste for salt. That's it!

Here is a pizza I made the other day (bertuccis dough--I don't know how to make dough from scratch! :P )

Finally, on Monday, I made 25 pounds of spaghetti sauce from some flats of ripe plum tomatoes I got at a farm stand. We ate some with pasta for dinner--it was so good I am going back to get 25 more pounds to process:
