St Thomas Favorites?

For an elegant evening dinner I reccomend the restaurants at both the Ritz and the Wyndham Elysian Beach Resort. This would be a good choice for ending a day out near Red Hook and they are right by each other on the same road. The Ritz is more formal than the Wyndham, and their Filet Mignon is outstanding... however, the Wyndham had a lobster dish that trumped everything I had that week. They Wyndham also had a live piano player and the beach is only steps away... the decor was better at the Ritz...either would be a romantic evening.

Need to start my obsessing over our April trip to STT. It will be alot different than our trip to STJ in 2008 and we are looking fwd to it...
I read in a post about the Botanical Garden bing good, anyone been there or know where it is?
We are definately doing parasail from The Coral World pier to gaze out over that north shore view...anyone done this? Any pictures?

To add to the list:
On your way to/from (I suggest both
) Magen's Bay, stop at Udder Delight for a rum milkshake. AWESOME hidden gem.
For a great view of Yacht Harbor at night, a wonderful breeze and some nice greasy pizza -- try Island Time Pub at American Yacht Harbor, Red Hook. 2nd floor. Always a great crowd too.
Greenhouse happy hour everyday 4-7 pm has 2 for 1 drinks. They make a mean painkiller.
And then one word of warning. BE CAREFUL WHERE YOU PARK WHILE AT COKI, especially in the afternoon. If you can't find room at the lot -- wait for a spot or come back another day. We got our car broken into parking on the road near the entrance to the beach.

Personally I think that if you are relying on websites as a primary source for info on restaurants and activities in the VI you will miss quite a bit as it just doesn't seem that too many of the local businesses here do much internet marketing.

Some other STT "fun stuff":
Paradise Point - take the tram up the hill to see the beautiful view and get an original bushwacker. Wednesday they stay open late and have a great band playing so you can dance and see the pretty lights of STT and the cruise ships.
Frenchtown - several good restaurants, Hook Line Sinker, Craig and Sallys's, Pie Whole (gormet pizza and belgium beer), Oceana. Fun to walk around and see all the boats at the marina and watch the sea plane landing.
Kayac with VI Eco Tours - http://www.viecotours.com/ - they have two trips, one at the mangroves (south shore) and the other leaves from Frenchtown and goes to Hassel island. I've done both and they are lots of fun and educational.
There are two excellent restaurants on the north shore that have beautiful views. Thirteen and North Side Bistro.

You hit a cord w/ me and STT. My Family owns a condo on Sapphire and I've been coming for 10 years so I thought I'ld chime in. I perfer the East/End Red Hook area. It has more of a Cruz Bay feel for me.
Definalty hit Island Time Pub, great food and atmosphere, they also have happy hour drink specials from 4-6pm every night. East End Cafe has great Italian specialies. Agave is a great "date" restaurant.
Beaches: of course Megans Bay (Udder Delight is a must!), Sapphire Beach, and Lindquist (Smith Bay) Beach are among my favorites.
And you can always catch the Car Barge to St. John for a day trip, or take the people ferry over for dinner and a night out in Cruz Bay.
