What kind of boat? Boston Whaler or the like? If you're really wanting to take out a boat which is great fun! Go to Sopers Hole (west end) marina. I've flown Seabourne from STT to St Croix & back to STT.
You board & disembark at a dock. The bays they land in are very well protected & are rarely rough.

They fly lower than most small props, take off & landing in my experience has been very smooth!

STT is the only Virgin that I've not run on. So I may be very little help.

I always run very early around 6am. I ran the 8 tuff mile route by myself on STJ which is RT 10 (Centerline) but again it was very early morning so not much traffic.

I saw a Lemon s few years ago while diving off George Dog in the BVI.

A dive operator on STX told me that he thinks the water has been a little cooler than normal for winter & that tends to bring in larger or pelagic fish.

Spotted Eagle Ray

I've seen rays jump out of the water while sailing. I've heard the theory that they are trying to knock off parasites or they're being chased by a predator.
I've also been told by back country (Islamorada, FL) fishing charter captains that rays landing into boats does happen.
