If you don't mind cooking

Post by BillVT »

If you don't mind cooking there is a cheap pork shoulder at Starfish. Give it a good dry rub, wrap it in tin foil and put it on the grill low and slow for about 4 hours. A little bbq sauce and there you go. Feeds a lot.

Sounds wonderful for a villa gravity day! Your post is just in time for our spring trip to Jost. Planning on cooking a minimum of 3 meals at the villa. May have to rearrange my menu, hmmmm, and change my provisioning list.

Nothing funner than a bbq under the stars with a bottle of wine and good people!

Bill: I'll second your comments regarding the pork shoulder deals at Starfish. There's a pressure cooker at Coconuts, so we get to short-circuit the slow cooking process, grabbing the ingredients on the way back from the beach, and still having an early dinner. Starfish's pork shoulders can use a bit of trimming of their thicker fat bands. We throw in a bunch of chopped cilantro, onions, garlic, celery, and adobo, and set the pressure cooker on a low flame to pisch for one hour. In the meantime, we chop a side of pico de gallo, another of feta, olives, and tomatoes, and crank open and nuke a can of black beans. There's usually some red wine, and sunset from the hot tub while we wait for the pressure cooker to work its magic. Totally awesome, and plenty of leftovers for lunch the next day!

All the best,

Kevin
