Enjoyed a "lazy" St John dinner

We really enjoy Valley Doll sauce and were so glad that St John Spice was selling it when we were on STJ last year. The first time we got it was at Shipwreck Landing several years ago. An easy "lazy" dinner for us is to marinate chicken breasts in the sauce for 24-36 hours, then grill or bake them. I suppose if one was a more creative cook than me, you could add some ingredients to the marinade, but I just use it straight. We had this on Memorial Day and it was a yummy taste of St John while sitting in VA. When we were there last year, Shipwreck Landing had a delicious dish of chicken and one with fish that had the Valley Doll sauce and some other ingredients (nuts and others). Now, if I just had a piece of that frozen Key Lime Pie, it would really transport me to STJ.

We also marinate our chicken in VDHS. Add a rub of St John Spice's garam masala then grill it over low temps. You'll love it!!!! We just reordered the sauce and spice and it's almost gone!!! We'll stock up on our July visit for sure...
