Quick easy meals on island...

Hi forum family!I thought I would bring up ideas for fast easy food when we are on island time.No one want's to spend alot of time in front of the stove, so what's your favorite quick food?For me Uncle Ben's pre cooked rice.Open the package,dump in a skillet,add a can of chicken,and heat it up!Tasty,and easy.If your wondering where this burger came from,it's from the Soggy Dollar,and yes I did take a bite out of it!Image

We love just grabbing different types of Olive Tapenade, several different cheeses, great crusty bread and lots of wine for an evening watching the sunset. Hooray for Starfish Gourmet

I asked about this on off topic earlier today, but it probably will get more feedback over here so thanks for starting this thread, parafins! One quick thing that I made last year was grilled quesadillas:

and of course hot dogs/hamburgers and grilled pizza. I'll be making all of these again but am looking for new ideas too. I am hoping to keep indoor prep/cooking to an absolute minimum since we are renting a south-facing house with no ac in the kitchen.

Hey,I just thought about this... back in 2000 we stayed @ Gull Cottage near the Westin.The night we arrived we had no gas to heat our stove for a frozen pizza.As we all know the day you travel,you are beat down tired.So what is a guy to do?? I heated up the grill outside and cooked it up!It worked great.We found out later that the gas company filled the outside tank,and shut off the line to the house!

We like near east brand couscous in lots of flavors adding in black beans and protein, veggies, etc. very quick meals.
And once we brought frozen crab legs and steamed them on the grill. They were great!

I cooked a big pot of spaghetti sauce which we had several times. Add some garlic bread & wine & you have a delicious, easy meal.

I just stumbled across an easy cheap meal.

In a skillet...
1lb ground beef, cooked until no longer pink, drain fat
Pour in:
1 can of corn, with water
1 can diced tomatoes, with juice
1 package of Oriental flavor Ramen noodles, break noodles up a bit, throw in skillet with the seasoning
Cook for about 10 minutes until the noodles are cooked through

I used ground turkey when I made it and was pretty surprised at how good it tasted. Kiddos loved it! One pot meal for under $10 (STJ prices :) ), made it about 15 minutes.

Take tinfoil, just about any kind of fresh fish, slice some tomates, onions, maybe a little fresh cilantro , some pats of butter and a little white wine thrown in for good measure wrap it all up and throw it on the grill. serve over uncle bens microwave wild rice.

Also easy but requires 45 minutes or so in oven at 375 : Chicken breasts on bone with skins, butter, garlic powder, a little rosemary let it brown and just before its done throw some marsala wine on top cook a couple more minutes.

Take some good hotdogs from home in your Polar Bear Cooler, Chop some onions, saute both in one pan serve with mustard and canned chili and a cold beer on a porch overlooking Coral Bay... HEAVEN!!!!! :D :D :D

snorkelqueen, your ideas is one of our favorite things to do on island...counting the days until we leave next week! We also love buying one of the rotisserie chickens from Starfish and using it for a main meal then for leftover sandwiches, late night snack, etc. Last time we bought a roll of crescent rolls but unrolled the whole dough, sprinkled it with olive oil, spices and parmesan, shredded said chicken on top and cooked it on the grill on low for about 15 min--fantastic 'pizza'!

We had leftover grilled chicken and rice with beans. So, we shredded the chicken, added the rice and beans, some chips and salsa, and some shredded cheese, wrapped it in foil, and put it on the grill for fifteen or twenty minutes. Not as good as Margarita Phil's nachos, but good enough.

I tested a new recipe last night for possible inclusion in the St. John meal rotation and it was a hit. I am going to make it for a lunch on the beach one day. All the ingredients are usually available at the St. John groceries:

BLT pasta salad

8 ounces pasta of your choice, cooked, rinsed under cold water and chilled
6 ounces bacon, cooked, drained, and chopped
2 cups grape tomatoes, halved
1 head romaine lettuce, shredded

dressing:
1/2 cup mayonaisse
1 small onion or shallot, minced
2 tbsp. cider vinegar
1 tsp. sugar
salt and pepper to taste

stir all the dressing ingredients together, then toss with all of the salad ingredients in a large bowl. Serve chilled or at room temperature. FYI this makes a TON of salad--enough for at least 8 people.

Becky, that salad looks awesome! On a side note about the food at Soggy Dollar, their chicken caesar salad is excellent. Not what you would think to order there.

Discovered something new and realy good... We are on our last 2 days and have some poorly calculated meat left over. It was not enough for each person to have a peice, (3 hamburgers and a little steak), so I sauteed some onions, pepper, and celery, grilled the meat, and cooked a pot of rice with mushroom soup. Mixed it all together, and it was fantastic! Sorry no food porn, it was eaten too fast! :D
