OK, friends, I need some last-minute dinner help. Hopefully some of our resident gourmands can help me.

Tonight is the last night that my friend I bought my house from will be in town. She moves to her new home permanently tomorrow.

She loves my fried green tomatoes, and is known for sometimes showing up at my house with a green tomato asking me to make them for her.

So, I told her I would make them for dinner. But they are a side dish and I need a main course. Something easy because there will probably be a lot of activity at my house with everyone loading her up.

I usually make pulled pork, but that isn't going to happen because it's 2:30 and there is no pork roast in my crock pot...

Suggestions so far have been sliders (from my friend who bought me that slider-making kit for my birthday), meatloaf or barbecue pork chops.

It's not very "fancy" but you could turn the fried green tomatoes into an entree. Agnes & Muriels in Atlanta (gone now) used to make the yummiest fried green tomato BLT....some crusty bread, a little arugula, and some smoked bacon and you could be in business. Pair it with a nice pasta salad and a bottle of wine for a cool, simple, summer dinner.

Dang. I think I just made myself hungry.

Shrimp remoulade? just whisk together the sauce then you could just grill the shrimp up?

I'm probably too late but I would suggest shrimp and grits or fish tacos.

Not too late. Have to stop at Kroger on the way home.

Someone else suggested shrimp and grits. And, Vicki, I did wonder if I could make it into an entree. BLT's might work. The Loveless Cafe does those too, and I do have bacon.

Lots of great ideas. Of course, now I am being Queen Lazy and think it might be good to just stop and get a tub of take-out barbecue :) It has been a long week.

use them in a twisted caprese stacked salad. yum!
