HELP! Question with Cowboy Caviar Recipe

Some time ago someone posted the recipe for Cowboy Caviar. I'm going to bring it to a Super Bowl party tomorrow and I have a question.

It says to mix it up and let is set overnight but do I add the avacado now or at the last minute tomorrow? (I don't want it to turn brown on me.)

Don't know that recipe but I just heard that a trick to keep guac from turning brown is to leave the pit in it until ready to serve. I'd never heard that before but I'm going to try it.

nothingtolose turned us on to that :) I think I put the avocado in - it's got lime juice which should prevent the browning. but if you are uncomfortable with that add it tomorrow. it shouldn't matter either way.

Here ya' go:

Cowboy Caviar Dip

Open and drain in a colander:
2 cans black beans
2 cans rotel tomatoes
1 can white corn
1 can yellow corn

Chop:
1 avocado
1 bunch of cilantro
½ red onion

Combine ingredients on a bowl.

Add:
1-tablespoon olive oil
4 tablespoons of red wine vinegar
4 tablespoons lime juice
Dash of salt

Refrigerate over night.

Serve with chips.

I'm laughing at the name. Sounds a lot like the Mississippi Caviar I've had, the Delta Caviar, the "Name your southern city/town/general trait Caviar"

I was almost afraid to look when I saw the title. I though it might be one of those "delicacies" that involve normally not eaten parts of a cow....after I got that out of my head, it looks to be pretty good!

Ours is "Texas Caviar"- very similar- will try this one!
