Anyway it doesn't peel it just pits. Once you have the mango in 2 halves you are supposed to score it in to cubes and then I think run you knife between the skin and the flesh to remove it. I need some practice with that

I have 2 mango colada recipes. One with pineapple juice one with out. What do you think is best? Or should I just taste test both? 
1/2 cup pineapple juice
1 cup ripe mango, cubes
2 tablespoons fresh lime juice
1/3 cup cream of coconut
1/3 cup light rum
1 cup crushed ice
1/2 cup unsweetened mango juice or nectar
1 cup ripe mango cubes, fresh or frozen
Juice of one lime (about 2 tablespoons)
3 ounces (1/3 cup) cream of coconut
1/2 cup rum
1 cup crushed ice (or 1/2 cup if using frozen mango)

MaryBeth, I made an almost identical pasta to yours on Tuesday night--zucchini, summer squash, herbs, tomatoes...and some leftover grilled pesto marinated chicken.

no basil. I didn't think of it and didn't have any. it was an egg a flour mix and I also added in some parmesan cheese and garlic powder. Shredded in a red onion w/ the zucchini. Never made them before but they were very good. Charlie mixed up the sauce and it went nice with them.

This is closest to the recipe developed on our second trip to St. Martin. The variation is that I use pineapple/orange juice and cut up a whole mango.
