Looking for some camping recipes

Hello good forum friends,

I am hoping for some help here with an upcoming camping trip. We are responsible for cooking one dinner for three families. Last year we did pizza and it was very yummy but we had to use our grill rather than the campfire.

This year, I am going to use our tripod over the campfire and I am thinking of doing marinated flank steak. Can anyone provide any good marinades (I'm thinking I'll do three different ones) as well as a side dish or two that might be easy to make?

Or, if you have any other creative (but easy) camping dishes, I'd love to hear them!

Hi tracy I like soy sauce red wine ginger garlic and sesame oil I don't measure I just dump. sides camp fire onion soup large onion I like vadalas cut into 8ths but don't cut all the way thru put a beef bulloin cube in the center of the cuts and a table spoon of butter on top wrap them in tin foil so the look like hershey kisses put on the tripod for about 45 min hold over a bowl and slice the tin foil.

I like to do tinfoil packets of quartered red potatos over the camp fire. Add a little salt, pepper, garlic, and butter/olive oil...nothing better than a meal in the great outdoors.

Thanks Tom and LC - those are great ideas. I've done the tinfoil potato packets before but have never heard of doing onion soup that way. I'll definietly be trying that.

Is it too complicated to rig a spit over your campfire? I have a recipe for spit roasted chicken made in a fireplace, which would work on a campfire, but I am only going to type it all in if spit roasting is an option.

When I was in Girl Scouts, we loved to use the campfire to cook. We would wrap potatoes in foil and bury them under the coals, then dig them out and load them up with stuff-cheese, butter, etc.. We used the same method to make "hobo packs"--a piece of chicken, or a ground beef patty, surrounded by vegetables, wrapped in foil and buried under the coals.

Re: flank steak, I posted a link to a recipe in the food porn thread that John liked very much. Next time I make him a flank steak, I am going to use this recipe:

1/2 cup soy sauce
1/3 cup bourbon
1/3 cup brown sugar
1 tbsp. dijon mustard
1 tsp. hot sauce

marinate overnight.
It's like looking in your soup and finding a whole different alphabet.

I don't think we would be able to do a spit, but thanks for the offer. I appreciate the flank steak marinade recipe as well!

My standard dessert is always canned peach halves in light syrup, take a half, place it in the foil, put a pile of brown sugar in the center, with a marshmallow on top, wrap it loosely (like a little tent) and set it close to the fire (not directly in) while you are having dinner. It's also good with the caramel ice cream topping that comes in the little jars.

Well, I must compliment our dear friend Tom (Waterguy) for his delicious campfire recipe for Onion soup. It was awesome!

Everyone loved it and they are all planning to make it again. I added a few croutons and swiss cheese at the end - simply delicious. I should have taken pictures.

We are headed off for five days of festive camping. We'll post the bachanalia photos when we return. Sweet Christine made a couple of quarts of salsa, but the rest of the menu is getting delivered by the meat packer.

I'm glad you liked it. It is always a big hit. You should of seen the first time I made it for my friends who own Alesandra I was with him at starfish and i'm buying all these onions he looked at me like I was crazy. But now they make it all the time.
