Jan, thanks for your kind words about the flatbread crackers! I am definitely a better photographer than chef. I'll have to work on posting some pics!

There has not been much activity on this thread lately! What's everyone been cooking?

The other night I made myself bi bim bop--Korean rice bowl. I always try out new stuff while John's away. This one is vegetarian, I think traditionally it would have beef in it. It was pretty good but I think I prefer my less healthy recipe for vegetable fried rice more :roll: :

I have nothing to add here at the moment because I have been out of town and not giving a lick about cooking! But I'm going to change that this weekend I hope.

I have been wanting to try something with a peanut sauce - anyone have any recipes for me to try out? Is a peanut sauce always with peanut butter?

MB - I've been missing your pictures! It all looks delicious, especially your breakfast. I haven't had mine yet, and I'm afraid my cold bowl of cereal isn't going to satisfy now. The sugar-sprinkled pansies are pretty, too. Very nice.

Mary Beth, what is in your sandwich? It looks delicious.

I sometimes use peanut butter to make cold sesame noodles. Do you like those? I could put up a recipeif you want.

Becky, is that a fiddlehead in your spring vegetables? I learned last weekend that I am NOT a fan of fiddleheads :lol: :lol:

That sandwich was pesto, portobellos, carmelized onions, roasted tomatoes, roasted pepper, mozzarella and basil leaves. I warmed it in the oven to make the cheese a little melty.

Never had cold sesame noodles but I'd try them! Do you use it like a side dish or a main?

Mary Beth~

Are you interested in a peanut dipping sauce for satay?

1 & 1/2 cups coconut milk
1 Tablespoon Thai red curry paste
(I couldn't find this in our area so I used Thai Chili Garlic Paste instead. It was tasty, but very spicy.)
1 Tablespoon chili oil
1 Tablespoon sugar
1 teaspoon salt
2 Tablespoons creamy peanut butter
1 teaspoon lime juice

Heat coconut milk until boiling. Add curry paste and chili oil, stir. Add sugar, salt, peanut butter and lime juice. Simmer 4-5 minutes.

The Roti thread got me craving them, so that's what I made last night, after getting hold of Roti rounds from the Indian store, plus Blind Betty and Caribbean Curry powder from Ruth. I realized the recipe I had used before was the same one Liamsaunt posted; however, when I made them before I did not have BB or the Caribbean curry powder. Both times they were delicious, but somehow they tasted better last night.

The Roti rounds were too small to fold into a square pocket so I just folded them like a turnover.

Sweet potato fries with Caribbean catsup (from Ruth, too.)
