Dips and Appetizers

I thought I'd bump this topic up to see if there are any more great ideas. I'm going to our lovey (
) local beach, Galveston, with 8 other ladies this weekend. We are renting a couple of condos and I know it will be fun, in spite of the ugly water, seaweed, stench, tar, jelleyfish, etc. We decided to eat out at night and do appetizers for lunch. I am leaning towards nothintolose's spinach and artichoke dip and mia's fruit dish. I just thought I'd see if anyone has any new ideas that are to die for before I go to the store tomorrow. I've also been assigned to margarita duty, so I'm taking the easy way out and getting one of those buckets. Maybe two.

If you like Rotel then try this one: two blocks of cream cheese, one pound of sausage and one can of Rotel. Mix all together and bake for about 20 mins. Serve with Fritos scoops.
I made Mia's fruit dip the other night for a get-together. I almost didn't since I typically like my fruit straight--the usual marshmallow fluff dips aren't something I like. Her brown sugar dip, however, was delicious! I had more than one person ask me for the recipe and all were surprised that it contained brown sugar. Yummy!

Got this recipe from a friend...
Mexican Cheesecake
16 oz cream cheese
1 1/2 packages of taco seasoning (recipe calls for Lawry's)
2 cups sour cream (separate)
3 eggs
2 cups shredded cheddar
4 oz can chopped green chilies
1 cup picante
Mix cream cheese, 1 c. sour cream, taco seasoning, then eggs one at a time. Add chilies and cheese. (I added 2 or 3 T chopped olives this time) Pour mixture in a springform pan and bake at 350 for 40 minutes. Cool and refrigerate overnight.
Before serving, spoon/spread remaining sour cream on top of cake then picante on top of that.
Serve with corn chips.
