I want to make a mango salsa type thing. Does anyone have a recipe for one?

mango salsa type thing? LOL that's funny! I just throw stuff together but maybe Liamsaunt can help you with a real recipe. What are you plans for said thing? Enjoy!

I throw mine together too, but I use:


Mango
red onion
jalapeno
cilantro
lime juice

X - thanks for the ingredients but I need specifics - I am a new cook :lol:

The Cruz Bay Grill Rub Citrus Marinade created a monster! When we got back in town a month ago, and I got my shipment from Ruth, I started cooking and have not stopped.

Before that, we ate out almost every night, now, we NEVER eat out - except maybe once a week.

I am always looking for something new to cook - am really loving using our BBQ pit - but don't have alot of ideas. Hell, I had to call Cat and ask her what "zest of lime" was when I first started doing the Citrus Marinade.

So, Mary Beth, I want the mango salsa thingy to be a side for either chicken or pork or fish.

I made an awesome coconut/pineapple rice as a side for my mango/coconut shrimp last week and wanted to have the mango thingy then but didn't know how to make one.

p.s. I LOVE marinades too so recipes for those would be great as well.

Ok, let's see if I can narrow this down

1 large mango (cust in small cubes)
1 small red onion miced or diced very small
1 jalapeno, diced seeds removed (or 1/2 if you don't like heat)
1 handful fresh cilantro, finely chopped
1 or 2 or 3 fresh squeezed limes ( this is to tast. Start with one and see if you like it, add more)

Hey Cat,
I don't know how to make one, but my husband is crazy about one we buy at Costco.
It's actually "Peach Salsa with Mango" in a jar in the refrigerated section. I don't know the brand name but could find it easily. I'm sure it would list the ingredients, too for copying purposes. I've chopped a little fresh cilantro into it and added a touch of lime and/or orange juice sometimes. My husband doesn't care, he likes it either way.

Here is a good recipe. I just made it last week and can post a picture of it on top of chicken (grilled with Ruth's Cruz Bay rub marinade..)


2 cups diced ripe mango (I squeeze the juice from it, too)
1 cup diced fresh pineapple
1/4 small cuke, peeled and diced
2 T minced red bell pepper
1/4 cup diced red onion
half a jalapeno (or more), seeded and diced
juice from a big juicy lime
2 T minced fresh ginger
1 clove garlic, minced
1 T light brown sugar
1 T rice vinegar
lots of chopped cilantro

a little honey or sugar to taste, if desired

you can pulse everything lightly in a food processor.

Yum, Maryanne, you live in my state, can I come to your house for dinner please? :lol:

Here are the two I usually make:

Mango-black bean salsa

2 medium plum tomatoes, chopped
10 yellow cheery tomatoes, chopped
1/2 red onion, minced
1 jalepeno pepper, minced
1/2 can black beans, well rinsed
2-3 ripe mangoes, peeled, pitted, and chopped
juice of one lime
cayenne and salt to taste
2 tbsp. cider vinegar
3 tbsp. olive oil

serves 4

or...

one mango, chopped
3 tbsp. diced red bell pepper
1 jalepeno, minced
3 tbsp. minced red onion
3 tbsp. diced jicama
1 tbsp. peeled, minced ginger root
3 tbsp. lime juice
salt to taste

serves 2

I usually pair the first with tuna, and the second with cumin-crusted grilled cornish hens.
It's like looking in your soup and finding a whole different alphabet.

Guys thanks for the recipes - can't wait to try them.

Liamsaunt - what is "jicama" so I know where to find it at the grocery? Remember, I am new to cooking :) Also, with regards to the ginger root. Do you buy the root or is that a spice that comes in a spice jar?

ginger root is fresh ginger...the light brown gnarly-looking thing you see in the produce section. totally different from powdered ginger. recipes like this depend on the ginger being fresh.

you generally peel and dice, or grate, fresh ginger.

liamsaunt, there's always some kind of cooking party going on here; sounds like the same at your house.

(jicama is also in the produce section. kind of turnip--like to look at but with a crispy texture. sort of, to speak for her)

I like this site because you can search by ingredient. Sometimes by doing that (instead of a narrower search), you get good ideas.
