Todays linner featured St. John Spice spices so I will post pictures: here are scallops wrapped in bacon that have been marinating in Cruz Bay grill rub and olive oil. In the back is swordfish that marinaded in pineapple juice, lime juice, etc. plus St. John jerk spice and a good tablespoon of voodoo spice (whatever that is!):

I think you would starve at my house. Tonight was particularly exotic with Chicken Teriyaki Skewers, Spinach Feta Hummus w/whole wheat Pita and green salad. That's pretty aggressive for me. I wanna come to your place for dinner!

marybeth, the side dish is a crispy rice cake flavored with lime, cilantro, scallions, sesame, etc. I'll be honest and tell you that it was only OK.
jdw, the recipes are really easy--for the scallops, all I did was marinate them in olive oil and cruz bay grill rub, then wrapped them in parboiled bacon, grilled them and served with a chipotle lime aioli. I took the bacon off before serving the scallops--it gave a subtle smoky flavor to them. The sworfish marinated in the juice of one lime, about a cup of pineapple juice, and a heaping tablespoon each of St. John jerk spice and voodoo seasoning (this was something I found in Ruth's grill pack sampler). The sauce with it is the mango butter recipe I posted a while back, with extra cracked pepper added.

I wanted to take a picture of my results of Liamsaunt's grilled shrimp but I left the camera at the office. I even set aside pretty little sprigs of cilantro from my bean salad to dress up the plate.
When I mentioned my disappointment of the missing camera to Hubs, he said "you want to do what? post pictures of our food on the travel forum?" He doesn't quite "get it"

Grilled Carne Asada sliced and served fajita-style with grilled sweet peppers and onions, refried beans, guacamole, sour cream and salsa with a nice, healthy whole wheat tortilla (I would have preferred corn).

Y'all are gonna get skinny if y'all are not careful!
I recently cooked a 20 pound beef shoulder clod. This is a big roast composed of 2 muscles from the front shoulder of a cow. The knife is to provide scale, the blade is 9 inches long.

I cooked this for 18 hours over hickory and cherry to 185F. The rub was a basic turbinado sugar, salt, black pepper and paprica. Next time I'll cook to 195F as the meat was not completely falling apart.

This was much more popular than I expected (I'm a pig man). We are cooking for 200 in August at our annual MASHOUT (Mid-Atlantic Homebrewers Campout). Normally we do about 180 pounds of pork butts. We are going to do half beef should clod and half pork butts this year.

Other New Englanders will note that there is a SERIOUS PROBLEM with these rolls--my Dad bought the rolls over and obviously they are the wrong kind! Everybody knows you serve lobster rolls on a split top griddled roll! Everybody but my Dad, apparently.
Oh well. I don't eat lobster, so I really didn't care.
