Well... After four straight weeks of business travel (Montreal, Toronto, Edmonton and San Diego) I finally had a chance to cook. We spent a good deal of the day cleaning house in anticipation of my daughter's high school graduation party in a couple of weeks, so i kept it simple.

I took the jerk seasoning that I bought from Ruth at St. John Spice and made a paste with some olive oil and rubbed it on the chicken and let it sit for an hour. Then I skewered the chicken with some red and green bell peppers, Vidalia onions, mushrooms and pineapple. I rubbed the skewers with some olive oil and sprinkled with some additional seasoning and then grilled them on the gasser on low heat. I also par cooked some fingerling potatoes and then totally forgot to put them on the skewers! I skewered them separately and cooked them by themselves. We served it all over a grilled pita and topped with some salsa with chopped mango added.

All of this food porn is driving me CRAZY!!! It's 8am and I want dinner. I think I will come over to all of ya'll's houses and let you cook for me (O:

I would love to be able to cook like that. Hell, I would love to be able to cook. Never seem to have the time. We always eat out for dinner and it would be really nice to have a home cooked meal...especially ones that look like the ones ya'll always post. Those look like restaurant food!

We grilled out this weekend (with Gromit and her hubby) and my lovely nephew stopped by with some lobster. YUM!

Everything looks yummy! I have some food porn photos to share with you from our trip, I just have to get them uploaded to flickr. I finished typing in all the text of my trip report yesterday (all 20 days worth, it is VERY long :? I may have to do some editing), and am going to attempt to unlock the mystery of photoshop after work. Soon come! :D
It's like looking in your soup and finding a whole different alphabet.

Here is a quick and easy one works good in a villa too.

On a large square of alumunum foil put 3/4 cup of minute rice uncooked I like 1 teaspoon of old bay seasoning some garlic and a pinch of salt. mix it up Add vegies of your choice here I had brocoli pea pods and green onions add a 1/2 pound of peeled raw shrimp on top fold the sides and one end to make a pouch pour 1 cup of chicken broth in open end and close put on grill or in the oven at 350 for 20 min and your done.
