coleslaw help!

Just got back from an idyllic trip to St. John, and had the most amazing coleslaw from Starfish Market, the "native" stuff made by Doris, not the regular coleslaw. Anyone know how to make something like it? I'm going to try to write to them for the recipe too, and see where that gets me.... :roll:

I'll have to try it in a couple of weeks. Does her recipe have raisins in it? Last year we spent 2 weeks on Tortola and the slaw they serve all over the place there has lots of carrots and raisins in it. It's very sweet and very good.

Here's what I do and it comes fairly close to the Caribbean slaw that we got on Tortola. I buy the coleslaw at my local deli. To this I add shredded carrots and shredded red cabbage, plus 1/2 cup of Golden raisins, and a little more real Mayonnaise (maybe 1/2 cup_ and a little (2 teaspoons) of sugar. [I'm not one to measure stuff. I'm more of an 'eye ball' cook.]

Try it and see if it's close. It probably won't be a good as you remember it tasting. I'll try Doris' slaw when I'm on STJ and see if it's the same as my favorite on at the Jolly Roger at West End Tortola. My mouth waters just thinking about it.
