How to cook local root vegetables or Plaintains?

Are you getting tired of my questions yet? I am getting so excited and last minute questions keep popping in my head. I see all of these lovely root things in the store and I have no idea how to cook, bake or grill them. Anything special you do with them or simple recipes?

I love plantains! I peel and slice ripe ones fairly thin and fry them in a hot pan with a little butter (for a minute or two)...and yum, good with eggs, a Cuban sandwich, or for dinner alongside pork, chicken, or black beans. Enjoy :D

One of our favorites is the indigenous sweet potatoes. We bake them or throw them on the grill until they turn black and they are delicious. They look like a regular potato but are white and purple. I have noticed they don't keep as well as regular potatoes so we eat them within a day or two of buying them.

Cindy, if you do a search on TA, I remember St.JohnJulie writing about preparation of local vegetables with pretty good detail, as well.

On island and baked the purple & white potato by throwing it on the grill. Outside turned black and inside soft and sweet. The texture was different. We enjoyed and I would make again.

Us too! Got them at Pine Peace (beyond the gas station, LOL) and we loved them! Reminds us of marshmallow, almost. We also tried yucca. Not so great. We had sweet plantains the other night and liked those a lot.
