Mango Rum Drink Recipes - from Beas Maison thread

Here's 2, for those who asked

1. FROM THE BAREFOOT CONTESSA
1 mango
1/4 cup lime juice
1 teaspoon confectioners sugar
1/2 cup rum
1/4 cup orange juice
cup of ice

blend all on high for a minute until smooth

2. ALTERNATE (haven't made this one, proportions are a little different, it's for when you have a larger mango)
1/4 cup + 2 tbl. Rum
1 1/2 cup mango
3 tbl lime juice
2 tbl orange juice
2 teaspoons confectioners sugar
2 cups ice cubes

blend all on high for a minute until smooth

Those sound yummy (too complicated for me) but yummy. Remember I am the tang and orange rum drinker :)

I just made these today. I made the first recipe and I think the second one would be better. It needed more mango, less lime and more sugar. It was wonderful though! Yum!!!

sea-nile, thanks for the taste test. will try recipe #2 this weekend. the best drinks were made with the vita-mix while on st. john last month when we just threw in everything in the fridge. for entertaining, i like to use a recipe because often i will haul all the ingredients (including the blender) to someone else's kitchen and i like exact measurements. and with a recipe, it's so easy to double it.

what kind of rum do you use?

I used Bacardi this time.
I think it is a matter of personal taste. I usually like limey things a lot and found that this was a little too limey. I usually like it more frozen too so if the mango was frozen ahead of time that would be real good. I am already looking forward to making it again!

sea-nile, got a call from a client with whom i shared the two mango rum recipes, she tried #2, and RAVED about it. she used canned mango.

i cannot wait to try it this weekend, of course with fresh mangos.

Mangos are on sale at all of the supermarkets in my area and they are delish! I think I am going to try some drink recipes this weekend with my girlfriends! Hubby is off on another trip for 2 1/2 weeks! :wink:
