So I just heard from my good friend in Coral Bay that the owners of Island Blues have closed the place down. Very sad news. It was one of my favorite hang-outs.

I have started my career in the restaurant biz when I was 10 and my mom started managing a restaurant. I have waited tables, done the books, bartended, cooked, washed dishes, you name it. I would never attempt to own a restaurant, athough I would love to.
Owning a restaurant is a massive commitment and for the first few years, the restaurant owns you.
That is in the states.
Add in power outages, inability to get certain "fresh" foods, sometimes transient staff, hurricanes, and low season.
You need deep pockets, unlimited energy, and thick skin.
