I think Beach proposals are great.
Head to the beach for the day as a family.
You take a walk without them and write in the sand
Her name and Will you marry me?
Stay at that end of the beach with a camera.
He and the GF get up for a walk, he has the ring in his pocket. They stumble upon the beach writing, he gets down on one new and you are there with the camera!

Will she like a big production or would she prefer something quiet and private? Is he thinking that you will be close by?
My idea is visit Caneel for cocktails up on the sunset terrace. There is lots of room to spread out. He could take her off to the side and propose. Have dinner at the Sugar Mill afterwards. He could also arrange for a private table on the beach or in the ruins, which is very romantic.

I don't know if it's impossible to get fresh oysters on St John, but champage with fresh oysters (or some other comparable seafood) and one with the ring visible right on top. In the absence of oysters he could drop it into her champage glass but make sure it's not completely dark so she won't swallow it!!!!!!!
Have him buy a mini treasure chest, put the ring in it and securely tie it to a rope with a stick tied to the other end. Sort of along X's idea, you guys go ahead and bury it leaving the stick lying on the sand and cross it with another stick marking an X in the sand. You can both step away (keeping your eyes on the site) and when your son and his girlfriend walk up they can dig together for a buried treasure and find the ring

Basically the same idea as the others:
You walk down the beach ahead of the "kids" and do the following. . .
Bury the ring in a treasure box, create a treasure map, have the X surrounded in flower petals/candles (if you do this at sunset, it's really cool to dig holes in the sand and set the candles in it, as it creates a nice glow ~ Not tea lights, a little bigger), then have some of Catherine's famous rum punches waiting on hand. She is in the snack shop at Trunk Bay, so I guess you'd have to plan this before the shop closes for the day. You could always substitute champagne for her rum punches if you want to do it at sunset, instead.
Oh, this is assuming you pick Trunk Bay for the proposal site. I suppose any beach would do, but I can't think of any other that would be more perfect.
Good luck and best wishes!!!!!!!!!!
