Speaking of the forum cookbook.........

I keep forgeting to make a post about it. I'm getting anxious for recipes and food/meal ideas in general.

Recipes............any and all kind are welcome!! The cookbook is for favorite villa recipes from all of us forumites! It will be fun, we've already got a good "large party" drink in the works.........."THE BALLWASHER". :P :P

RonL: I sure hope you'll let me use some of that "food porn" recipes that you keep teasing us with! The food looks really really good, it makes me hungry!

I'm hoping to really kick the forum cookbook into high gear when we get back in June. So please keep this in mind while laid back on island thinking of what you like to eat and drink!

Just email them to me direct, and include a return email address. I'll have questions once I get rolling with this and will want to contact you guys.

Maybe RickG will offer his Buttermilk Pancake recipe that I keep hinting that I want :P He says on his website that he brings the recipe with him down to St John, it must be damn good!
Also Rick made a New Years Day dinner that he teased us with, maybe you can pry the recipes from him! It was south asian braised pork roast, braised cabbage and onion and curried black eyed peas that he made.

Jan, I'm going to try out a few recipes while we're on the island. I'll let you know how it works out, and if it's good, I'll submit the recipes to you for your cookbook. :D

Funny! I had my little Moleskine travel notebook out and I have the pancake recipe right there. I do have a ton of food recipes. But, the ones I feature on the island run to the grill, breakfast and pommes frites. The pommes frites are something I like to make during a villa day.

Buttermilk Pancake Recipe

Sift 2 cups flour (I use a collander on island), resift with:
- 2 teaspoons sugar
- 1 teasoon salt
- 1 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- (I pre-measure the dry ingredients at home, excepting the flour, and pack them in a ziplock bag)

Beat 2 eggs until light
- add 1 cup buttermilk
- 1-2 tablespoons melted butter

Combine the sifted and liquid ingredients with a FEW strokes. Too much stirring will set the gluten and make the pancakes tough.

Cook on a very lightly greased 375F surface until bubbles appear around the edges. Flip and cook until done. I do this with as many reasonable pans, griddles, electric cook tops as possible to speed the process. Hold the finished pancakes in the oven at the lowest setting until done.

I cant wait to make them this weekend, daughter has a crowd sleeping over Staurday night after her 18th birthday, perfect guinea pigs :wink:
