need dessert ideas

I am helping my sister with a brunch for my niece's graduation. Need a few dessert ideas that are small/individual/hand held items. Not looking for cupcakes as I believe there will be a cake for the graduate.

Any thoughts? Drawing a blank here.
Oh and I need to be able to make in advance at least 1 day.

Chocolate dipped strawberries individually set on mini baking cups.

Get a package of the plastic shot glasses & mini spoons and make mini desserts - tiramisu, puddings, trifle...

Maybe individual cheesecakes.

Individual merengues with a dollop of lemon curd or orange marmalade in the centers.

I'm thinkink like jac. Individual cheesecakes with different fruit toppings...kiwi, strawberries, raspberries, peaches...

I don't have a name for these but here is the recipe:
Place a bunch of Snyder's pretzel snaps (square shaped pretzel) on a cookie sheet (cover the cookie sheet)
Place the unwrapped Rolo candies (2-3 bags) on top of that
Bake on 250 degrees until the Rolos get glossy @ 3-4 minutes. Remove from cookie sheet or they will continue to melt.
Gently place/push a large whole salted (I prefer salted) cashew (I like Trader Joe's cashews because they are pretty big and mostly unbroken) on top. Let cool. If she has certain school colors you could get the colored jimmies and sprinkle a few on top. I usually do red and green for Xmas.
So delicious!! Everybody loves these when I make them.


PS: Jello shots are hand held (in school colors too) :wink:

marybeth, how portable does this need to be? you could do chocolate carmel salted tarts or --easier (maybe)(chocolate crust, caramel filling chocolate on top with seasalt--i think you can get the caramel recipe from epicurious and adapt--)
homeamde mini chipwiches.....

30 some odds baby cheesecakes in the freezer. Might make something else in addition and i have toffee. I should be good.

Anyone go to Costco here? The almond toffee is insanely good!

the recipe I had was for mini strawb. cheesecakes so there is a sauce that I will make day before or day of and then just let the little cakes thaw. fotos on party day I hope.

When I am looking for a variety, I often go to the bakery and buy individual squares of desserts. Usually 1 serving can be quartered and put in mini muffin cups or doilies. It's a great way to give lots of options without baking full pans of desserts that often just go to waste.

My step-daughter made some really cute "graduation caps" using an upside down mini peanut butter cup, topped with a mini chocolate covered graham cracker and something for a tassel (in the school colors). I sent you a picture in an email.

Sounds like you have everything covered, but I'm commenting anyway!

Like P-600 I've made the pretzel snacks and we always top the rolo with a m&m which would be easy to do in school colors for a graduation.

Marcia-thanks for your idea, I think those sound pretty cute!

our Grad party was today and it was a lot of fun and the graduate had a great time. at the last minute this week I decided to make the rolo things and they were a huge hit. people couldn't stop talking about them. crazy, right?
