Pie recipes needed...related to my UGH post

My daughter has been such a sh** lately. Everything I say is wrong, stupid or a lie.

I have given up arguing, making a smart ass comment back and making threats. I was just like her as a kid and I know she doesn't care how really crazy she is making me and she is just in that stage where she is only thinking about herself. I get it. I'm having chest pains, people.

So yesterday she starts complaining that we never have good desserts and why can't we start eating pie. Like where did that come from????

So my brain starts turning and I have decided I am going to "kill her with kindness". I want us to make a pie together every week.

Why?

You can't get too pissed off at your mom on Monday when you decide on the flavor of the pie. (I know she'll like doing that).

You can't get too pissed off at your mom Tuesday if you are making pie.

You can't get too pissed off at your mom Wednesday if you are eating pie.

Thursday and Friday? Well, she is going to pissed at me on those days, because NO, you cannot go to the mall alone at age 12. NO, you can't go to the movies at night with your "boyfriend". And I DONT CARE who gets to do it! And YES, you have to go to church at least every other weekend.

SO....I need pie recipes! Pronto! Please? :lol:

Mother of just one child...a daughter. It NEVER occurred to me, to make PIE! Great idea.
This is the only pie recipe I know by heart.

Double Good Blueberry Pie:

9" pie crust
3/4 cup granulated sugar
3 tablespoons cornstarch
1/8 tsp salt
1/4 cup water
4 Cup Blueberries
1 tablesppon butter
1 tablespoon lemon juice

Whipped Cream (optional)

Combine sugar, cornstarch and salt in a saucepan. Add water and 2 Cups Blueberries; cook over medium heat, stirring constantly, until mixture comes to a boil and is thickened and clear. (Mixture will be quite thick.)

Remove from heat and stir in butter and lemon juice. Cool.

Place remaining 2 cups raw blueberries in pie shell. Top with cooked berry mixture. Chill. Serve garnished with whipped cream.

no pie recipes....but my duaghter's parting words to me (she left yesterday for a week away in HIlton Head)
were : ' have a nice week not yelling at me'

What an absolute perfect thing to say. Hilarious.

Minde, your recipe has been printed for my collection. Sounds YUM and we are big blueberry lovers.

Have a great Chocolate Chip pie recipe that I will send you when I get home from visiting my daughter in CA.

BTW -- did you decide on a summer trip to STJ? We will be there June 12- 19 staying at Grande Bay -- would love to see you!

We are thinking of St. John over Thanksgiving. We are going to Hawaii this summer, almost completely free compliments of my husbands pretty much full time travel.

So because it turned out we got so much "free", we have enough that we think we can allocate to a St. John trip :)

The travel is one reason I think I am having a harder time lately. I am sure my daughter thinks I'm not too easy to live with either. :?

I love St. John in June, that is my favorite time of the year to be there. Drink a painkiller for me!
