This really is STJ related. I promise :)

My parents are going to be house and dog sitting while were on the island, so I decided to load up the freezer with meals for them. (see...)

It's in the 50's today, so I'm cooking...

***CAUTION*** Food Porn follows. Not for the hungry... :lol:

Three briskets injected with beef broth steeped with Montreal Steak Seasoning (cooled before injection) and then rubbed with Montreal Steak Seasoning.

Two boneless pork shoulders injected with pineapple and apple juice that was seasoned with Three Guys Smoking Pork Powder and then rubbed with pork Powder

A trilogy of fatties (a fattie is a breakfast sausage log that is smoked for two to three hours). (If you thought of any other definition of fatty, you've been hanging out at Foxy's too much! :roll:) The lower one is Jimmy Dean Italian Sausage stuffed with provolone, pepperoni and sun dried tomatoes, the middle one is a turkey breakfast sausage log wrapped in bacon and the top is a nude JD Maple log.

Here's the inside of the stuffed italian fatty

Two spatchcocked (butterflied) chickens injected with butter seasoned with Spicewine Ironworks Hen and Hog dust and then rubbed with H&H Dust

A dozen "Atomic Buffalo Turds". Cored jalapenos stuffed with a mixture of cream cheese, pork powder and chopped up Little Smokies and then topped with a bacon hat.

Oh good lord, I think I've died and gone to Carnivore heaven. Can I come over? I think I better have a steak for dinner tonight!

PS: I do the Jalpeno Boats too! Mine are a little different. Their sooooo yummy!

And where is Batavia Il? My family hails from Springfield, though most of the sane ones moved away by now!

SJinNJ, lipitor my friend. The miracle answer to anything in those type of pictures.

I just threw on two racks of baby backs, doing them offset instead of smoking. Almost same affect with some hicory.

And then some margaritas.

Yep, meat is wonderful. I'm gonna try that roll.

Some of the food is done (and some of that has been eaten! :) ) Picture below...

Chrisn, come on over! The briskets and pork should be done about 10!

Flip-flop, Batavia is in the western 'burbs of Chicago.

Waterguy, what kind of smoker are you getting?

CG, we'll only be gone for a week. Some of that is for us during this week and some is for our freezer as well.

SJ, we don't eat that much meat either. I just figure that it doesn't cost me any more in charcoal and wood to cook one brisket or a full cooker, so i fill it up!

OK... Here's the picture so far. The fatty trio were great. The cheese did ooze out of the stuffed one. I didn't seal it enough. They look darker in the picture than they really were.

The ABTs were also great, but the jalapeños were pretty hot. It took two beers after a couple of them!

We ate one chicken for dinner and the other is going to be vacuum sealed for the freezer.

OMG I think I am having a heart attack!!!! I want some!!! Good thing I am not really at risk for that heart attack but the braces I just got put a real damper on eating anything I can't just swallow. It doesn't hurt anything to look though!

I love the food porn!!! :D

Cat, but there's more! :D

The briskets are the picnics are both done and put away. The briskets were just a tad overdone, but had great flavor and the pork was falling apart.

I all ready have the smoker it's just buried under about 2 feet of snow from the last 2 weeks of nonstop snowing. Its a custom made Texas smker I pickrd up in San Antonio a while back.
