Is Shelia's Pot open for lunch everyday or is it just random days/certain days?.....would you know a ballpark timeframe also?

We've always enjoyed getting some local food when we've been on STJ. It's a whole experience that a lot of visitors miss out on. For lunch in Cruz Bay, in addition to Shela's, we've been happy with Patrick's and with Hercules. We always get to Sogo's for dinner. And we like to stop by Mooie's for a drink. We also used to stop by Cap's sometimes, but sadly those days are over.
In Coral Bay there are a few small truck/trailer/stand operations at the triangle. Fire Foods, in particular, turns out interesting stuff. The Sputnik bar has food sometimes and is a good place to stop for a drink and a very local experience. They also have live music sometimes. We've also always liked Sweet Plantains, which is sort of upscale local food.
When we travel we like to try what's unique to that place. We wouldn't think of going to the islands and eating Chinese or Italian or Middle Eastern food. We look for food that has something to do with the Caribbean and something that we're not likely to find at home. We also like to eat in the kind of local restaurants that couldn't exist back home.
