Q for the foodies about Tahini?

Have question for liamsaunt, mb, or any of the foodie home chef peeps.

So I buy my Tahini at the whole foods store. It comes in a can where you open the top with an opener, then re-cap it with a plastic lid. I think the brand is Goya.

How long does Tahini stay fresh and good? How should you be storing it if all is not used? Is it like peanut butter?

The metal can freaks me out kinda. What do you guys do?

hmm. I have always bought it in a glass jar and refrigerate after opening. When I want to use I set it out until it comes to room temp. It gets thick when cold like PB and there's also a natural oil on top.

it should be fine--nut butters will go rancid but only after a long time--kept in teh fridge it should last a good long time (you will be able to tell by the smell and the taste) --i have never had an issue withthe metal can, but if you want, decant it into a jar
