Yours looks delicious! Your fish looks battered and fried? I don't fry things because I can't stand a fried smell in my house, but I understand that a good fryer takes care of that? Is that true?

I marinated my fish in lime juice, jalapeno, and cilantro for twenty minutes, then grilled it. Healthy but probably not as tasty as yours.

Maryanne, no, I actually don't find that the fryer helps with odors. The problem is that as you continually open and close the lid, oil particles escape. The only thing that works is to scrub down the kitchen afterwards, including the cabinet faces, and then cook something else to cover up the fried smell!

In nicer weather I bring the fryer outside and run a cord from the house rather than stinking up the kitchen. But, it was my nephew's birthday and that is what he wanted for dinner, so that's what I made!
It's like looking in your soup and finding a whole different alphabet.

When I was in FL last week we made shrimp skerwed on rosemary branches from the bush on the property they were out standing and I didn't get a picture but her is the salad from that night.

Tom, you are making me really miss summer with that salad. Fresh, ripe tomatoes, fresh basil (I always grow my own) and fresh mozz...YUM. Drizzle with some good balsamic vinegar...

Ahhhhh, summer.

There is a place in door county called the oilier that has great balsamic they just opened a store in brookfield. Their website is http://oilerie.com/ what is great is you get to try all their produsts and they fill the bottles infront of you so you know you are getting what you tasted. I picked up a pear balsamic this weekend that makes great salad dressing

I just got this in my e-mail and thought I should share it with you guys. I haven't tried it, and the pictures came with the e-mail. If anyone tries this before I do, report back! :D

5 MINUTE CHOCOLATE MUG CAKE
(The most dangerous cake recipe in the world)

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.

Pour in the milk and oil and mix well.

Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.

The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired.
EAT ! (this can serve 2 if you want to feel slightly more virtuous).

And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

No Pudge Brownie mix has directions for single servings on the box.

Just mix a little of the mix with non- or low-fat yogurt in a ramekin, pop in microwave, voila! warm chocolate goodness.

or evil chocolate goodness depending on your diet status :twisted: .

isn't it funny how cilantro is one of those love it/hate it things, but how you can also turn on a dime as to being a love it/hate it person. i used to be nauseated by cilantro...then one day, quite suddenly, it appealed to me. and now i love it. i am going to make this rice on sunday. thanks:)

I must admit I went over board on the cilantro in this dish but it was good for me! It tastes so fresh to me. My sister smells it and gags!

I also made a version of the brown rice Mushroom Casserole that Mary Beth posted a few pages back. Instead of brown rice, I used TJ's Harvest Grains blend (Israeli couscous, orzo, red quinoa and a few other things). It was good and felt healthy.

Janet, I made lemon roasted chicken yesterday too! I forgot to take a picture though.

Here is a meal from the other day: jerked shrimp, whipped curried sweet potatoes, a banana carmelized in molasses, sweet and sour cabbage, and some squash sauteed with sun dried tomatoes:
