Italy Trip Day4

Today is the day I have been waiting for cooking class day. We are up early we have to get to the Tiburtina station to catch a regional train at 8:00. We are heading to Fara Sabina.it was about a 50 min train ride There we were Italy trip day 4
met by Sally the co owner we piled into her car and had 30 min ride to the medieval hill top town of Toffia. After arriving we went to the local cafe to meet the rest of the class. There were 2 girls from England and one of their sisters from Australia. Everyone had coffee or espresso and pastries. We walked the narrow streets to the class that is held in their house.

Liana a elderly lady that has lived in this little town her whole life came and went through the making of pasta like her mom showed her.

Very interesting how she makes it but also a lot of work. Kneading and rolling the dough. She wanted to see the grain of the wood in the rolling board under it through the pasta.

We then made a Traditional Ragu I wish we had learned something a little harder Then few sauted veggies browned ground beef and canned tomato sauce.

For dessert We had a custard based dish.

After lunch we went to a old monastery that in the middle ages was powerful enough to have its own navy and merchant shipping.

On the train back to Rome Kathleen asked me what I thought of the day I told her the town was neat. Learning to make pasta from Liana was great but I didn't feel the day was worth 550.00 dollars. She felt the same way we weren't going to complain but they sent us a email asking what we thought of the day well we told them just what we talked about. They told us they had never had a complaint before, they did give us 150.00 back.

Got back to Rome it is New Years Eve. We didn't make any reservations for dinner not know when we would be back. We headed out the places that were open either weren't taking walk ups or the people were dressed to kill so we kept looking. We ended up having pizza at a little place not too far from our hotel. Pizza Popolo is kind of like time square the street vendors were selling champagne and party favors all around the square. At midnight there were fireworks that lasted about an hour.

Another great report and wonderful pictures!
I supposed the class was more for amateurs and not a professional type cook like you. It still looked like a fun day to me though!

did you get what proportion she used for flour eggs etc? there are usual amt;s but was hers different? was the pasta good?
I love that she rolled rather than extruded the pasta-- that is cool
< leaving on the 22nd of march...but too lame to figure out the ticker thing again!>

It was 600 grams of flour to 6 eggs I think I'll have to check the recipe

She said you could very the size of the batch it is 100 grams of flour per egg

Interesting to learn to do pasta in the Italian way, but I think 550 dollars is too expensive. Fine that you got a reduction. Great pics as usual!

That does sound like a fun day! But, I have to agree that $550 does sound a little high. It also brings up and interesting idea, it would never occur to me to take a cooking class while traveling, but it's a great idea and a wonderful way to really immerse yourself in a different culture. Thank you.
