So, I am going to put a beef roast in the crock pot for Sunday. I was just going to put in some water and french onion soup mix along with carrots, onions, celery and potatoes.
Well, my mom says I should cook the roast in beer, but I didn't know if I just do it in lieu of the water and if I could still add the veggies in with it.
Does anyone have any suggestions? I normally do my roast in the oven with one of those McCormick pot roast bags, so this is totally new to me. I just know I won't have time to be in the kitchen all day on Sunday before my family arrives. If I'm home, I'll have lots of cleaning to do.

Well I have a recipe that isn't very glamourous, but it tastes good. I usually use an eye of the round roast. My recipe is done slow in the oven, but you could probably do it in a slow cooker. Put the roast on top of some heavy foil wrap. Mix together cream of mushroom soup (1 or two cans, depending on how much gravy you want and how big the roast is), one or two packets of Lipton onion soup and a tablespoon or two of water. Spread the soups over the beef. The recipe says to put potatoes and carrots in with the beef too and then seal up the foil. I usually just wrap the beef and soups with the foil, put that in a pan and then throw in the potatoes and carrots with some butter and a bit of water.
Be careful, Lulu, the guys will tell you to stick a beer can up it's butt. Oh wait, that's a chicken. Never mind.
Okay...in the vein of being helpful instead of just being a smart alec, your guess is a-ok. You can substitute the beer for the water, or do 1/2 and 1/2. Put your veggies in just like you would if it was just water. I have never actually done this, but have read it before. Let me know how it turns out. I might have to try it sometime!

Lulu, let me ring in here and make a suggestion.
Salt and pepper the roast and lightly flour it, then brown it on all sides in a hot skillet in vegetable oil. Just brown it, don't try to cook it.
Then transfer it to the crock pot, add about 3 cups of red wine, or beef broth, or a mixture of the two, and add whatever vegetables you wish (potatoes, carrots, etc) some thyme, garlic, a bayleaf or two, cover it with the lid, cook it on low for about 8 to 10 hours.....and voila! A very delicious and easy one pot meal.
If you want gravy, make a rue (butter and flour in a sauce pan) and pour the strained juiuces in and stir while heating until thickened.

Here is a recipe that is a huge hit with some folks on another board that I talk about food with. It has been made by tons of people and everyone universally loves it. I have not made it myself because I don't eat red meat and a roast is too much meat for John, but I figure with so many good reviews it must be tasty, right? Plus it is definitely easy.
2 boneless chuck roasts (2.5 pounds each)
1 envelope Ranch dressing mix
1 envelope Italian dressing mix
1 envelope brown gravy mix
1/2 cup water
Place roasts in a slow cooker. In a small bowl, combine mixes and water. Whisk together. Pour over roasts. Cover and cook on low 7-8 hours until tender.
Add some carrots and onions with this.

I love the convenience of the crockpot - nothing like doing a little prep work in the morning/the night before and coming home to a house that smells like dinner!
But I don't do it as often as I'd like because it's hard to come up with a lot of variety - especially for the picky eaters in the house.
