Tarzan Hot Sauce
I remember some intense hot sauce we enjoyed at the 2000 STJ Carnival village with a hand drawn "Tarzan Hot Sauce" label. Does anyone know if this was made by John Gibney? I've heard Gerald Singer refer to his "Tarzan" nickname.

Yeah, we haven't seen Tarzan Sauce since John passed. Trinidad Charlies is a nice mild curry seasoned sauce, but the Tarzan Sauce was incendiary. We also buy sauces that are mixed chopped peppers with vinegars and herbs that are pretty, but not particularly saucy. There's another tasty version that we see at Shipwreck that I've heard described as "made by a local guy."
We make our own version and we are busy working that this season. We take a mix of red hot peppers (cayenne, tabasco, red caribbean, orange habanero, etc.) and puree them with salt and water and then do a natural lactic acid fermentation to get some sourness. We are still picking peppers here outside of Washington, DC, even though its 53 Fahrenheit today.
