Roti's and Mango Chutney

We had excellent rotis on VG at a little place on Main Street in Roadtown called Roti Palace. It is run by a nice lady from Trinidad. I had chicken and my hubby had whelk (which you don't see very often). The lady tried to dissuade my hubby from getting whelk because she said a lot of people order it but then don't like it. He loves seafood of all types and is very adventurous on food, so she finally agreed to make it for him. He really enjoyed it, so she was happy.

She served it with 4 sauces. There were 2 islandy hot sauces, one very spicy concoction made with garlic and shredded green mango, and the 4th was a delicious mango chutney that was sweet and flavorful.
Does anyone have a recipe for mango chutney and roti? For the roti, we love the island type curry flavor which is different from Indian curry, but I'm not sure what spices go into island curry.

I've not been to Road Town so I don't know how similar this would be, but I have made this recipe for chicken roti a couple of times and it is delicious:

This past trip I picked up some sunny carribee brand curry from Ruth at St. John spice. The ingredients are different from regular curry powder--supposedly it is a west indian curry. I have not had a chance to cook with it yet, but maybe that seasoning would give you the flavor you are looking for?

What was the mango chutney you had like? Was it made with fresh mango? I've always just used a jarred mango chutney (again sunny carribee brand from St. John spice).

I have made roti--similar to that recipe Becky posted. It's delicious. But I find that what makes some of the Virgin Islands roti so special is that they actually use roti dough. I made it once. It was a bit of a pain to make the dough but it is tasty and flaky without falling apart. I've heard that Kawan Paratha is a good frozen choice for Roti rounds, and I'm going to look in local Indian markets for it, as I now have a craving for roti and just contacted Ruth for some of that West Indian curry powder...

Regarding the bread, I just call my local indian place and get some cooked paratha from them. The first time they chopped it up into triangles, but after that I have been asking them to leave it whole and it is not a problem.

There's an excellent Mango Chutney recipe in the St. John Style Cookbook. I've made it many many times; friends always ask for it. Uses fresh mango.

I just realized I said Roti Palace in Roadtown on VG, but its on Tortola! The mango chutney was homemade by the lady at Roti Palace. It was brown and sort of a thick sauce, rather than a paste. It was sweet, but not overly so. I saw the Sunny Caribee brand all around Tortola - should have picked up some of their spice. Its on my to-do list to order some things from STJ Ruth, so I will get some curry spice. (I need some Cruz Bat grill rub!) Thanks for the pointer to the recipe and the idea to get the bread from an Indian place. We have quite a few Indian places nearby so I should be able to get some of the bread. Its probably beyond my skills to make the bread.
