Ok between Waterguy and Margo I have dinner! You guys should have seen the chicken hubby made tonight but he didn't take pics! It was boneless, skinless chicken thighs with cream cheese, jalapenos, diced pineapple rolled inside and wrapped in bacon. use a few toothpicks to hold it together. Bake. Way good!!!

here's what I made today to go with our grilled rosemary chicken dinner.
Orzo, feta, kalamatas, grape tomoates, scallions. yummm. best served room temp. IMO.

Here is last night's dinner: seared tuna over two sauces, green and red curry coconut, with crispy pear and scallion ravioli. Seriously, forget the ravioli and this could be an awesome way to showcase the island tuna. The sauce is just coconut milk with prepared thai kitchen brand curry paste, seasoned with a little brown sugar and fish sauce. The ravioli are easy too, but I draw the line at making ravioli on vacation :roll:

here's our dinner from last night. I said to Charlie last night, couldn't recall the last time we had a 'free' weekend where we could spend some time in the kitchen. It's nice for a change!

I always feel so inadequate when I see the wonderful food prepared by the forumites. I love to cook but we have a very limited food preference. No meat, just chicken and fish. We do not do digital photos either so cannot join in on the food porn. However, I love to cook. Tonight we had chicken breasts done on the grill marinated in balsamic vinegar and olive oil and stuffed with fresh from the garden rosemary. Grilled peppers, mushrooms, vidalia onions and sweet potatoes with Emeril's original spices and olive oil. We had this plus corn on the cob with BVI seasoning while sitting on our deck on a beautiful evening. We were also delighting in the Red Sox win over the Padres.
Our meal was accompanied by a light Pinot Grigio.

All I know is I need to travel north ... stop off at Marybeths for dinner ... then continue on to Boston to hit Liamsaunts! You guys make me drool & wish I knew how to cook :)

My kid said what are you doing dad taking pictures of food. I said for the food porn on the forum he just laughed and said I was stupid.
Now let me tell ya about Walkerswood Jerk seasoning it's as good as it gets if ya like jerk chicken it's da bomb!! As you can tell we jerk alot of meat here in central Ohio at the Captains home,9 lbs should get us by for awhile. We jerk chicken, pork, fish, It's all good.
