For beer can chicken you get the flavor from the rub, the salt pull the flavors into the meet via osmosis. Injection speeds that process up. You still need to let things marinate.

To be honest, the can is really a tool I use to cook the birds upright and get more on a grill.

Embarrasment of Mangoes recipes

Pete- Good topic, thanks for cueing it up.

I am currently reading the book "Embarrasment of Mangoes" by Ann Vanderhoof, which is about two 40 somethings who trade in their careers (put them on hold anyway) for a 2 year sail through the Caribbean...the reason I am posting this factoid is to let ya'll know she includes some good "Island recipes" in the book and it might be a source of ideas for you.

I checked the copy I am reading out from the local library...

Oh, BTW it is a fun book too.
