Favorite meal - eating in at villa?

Sounds good MJ. We are staying in Coral Bay. You are too aren't you?
I wondered if anyone would be interested in scheduling several places to meet up on different days. That way if you had plans or didn't feel like going out you could go on another day and possibly meet some forum people. If you guys are like me, when I am on vacation I don't want to HAVE to be on a schedule.
Maybe some thing like meet at a resturant around a certain time on certain nights or meet at a certain beach at a certain time on certain days. I don't know if that would work or anyone would be interested.
Am I making any sense?

Are you all going to be eating at the same time? That's a lot of people to be cooking for at once!
Here are some of my simple favorites:
shrimp scampi, with whatever herbs I can find at starfish. Sometimes on pasta, sometimes with crusty bread for dipping in the sauce.
crab cakes (I bring the crabmeat with me from home)
grilled chicken. I assemble the marinades at home, put the raw chicken in, vaccuum seal and freeze, bring in cooler. Slap on grill when hungry.
eggs benedict, or some variation on that. Hollandaise is easy to make in the villa blender.
Cruz bay grill rub steaks, or burgers, with whatever veggie looks good at the market. I found that Josephine's salad greens are cheaper than the bagged salad mix and a heck of a lot tastier.
I just thought of something else...the time my parents came with us for part of our trip, I made batches of lots of different frozen drinks at the beginning of their stay--bushwhackers, pina coladas, daquiris, etc., poured them into serving glasses, then froze them. The freezer was fully stocked with cocktails--you could grab and go with whatever drink you were in the mood for, at whatever time you wanted.

We grill alot when on St John. Steaks, chicken, pork chops, brats,hamburger with a salad and side.Keep it easy peezy bring it all with us even the salad.
My all time favorite is when my honey makes Tater Tot casserole. Fry up some hamburger and onions throw in a bunch of garlic if ya like. Throw in a couple cans cream of mushrooom soup,spread out in casserole dish smoother in motzerella, top with tator tots, bake for half hour or somthin like that. Wash down with a cold Presedente or whatever island beverage ya care for and eat it on the veranda watching the sunset. Pure bliss
For breakfast my buddy and I have found we really like our breakfast burrito we have perfected. Burrito shells travel very well. Bacon, scrambled eggs, chedder cheese and some homemade salsa we send down, wrapped all up in a burrito shell. Couple of these and your set till lunch comes calling. They really stick with ya for quite awhile. Gee wonder why my cholesterol is a little high
