As for getting more tarragon character, I wonder if you could whip the egg whites with tarragon puree? I don't know how well the whites would whip with anything else in the mix - never tried it. I've seen essential oil of tarragon before, but I think its in a water base and is not actually oily.

Anyway, I have found banana leaves at a couple of different hispanic markets. Sometimes they are in the freezer.
I haven't been cooking too much. Too much travel. I did buy a new-to-me toy on Friday that i am dying to play with. I'll be grilling pork chops and making stuffed acorn squash for dinner.

I made the Basil curry dish with shrimp on Friday night. I would guess I used about two pounds of large shrimp, which gave enough for the dish plus some. (We love shrimp)
Thinking the jalapenos wouldn't be hot enough, I substituted another type of green (in color) hot pepper and WOW!, it turned out nuclear and I had the oil on my fingers well into the next day.
I will do the red bell peppers next time. I really liked the dish and thanks nothingtolose for the other suggestions concerning the chicken spice absorption.

Not banana tree... banana treeS! LOL! Plant one and you get dozens. Are banana trees really a weed? It seems like it sometimes! Anyway, yes, we get bananas but they never ripen. They just drop lots of sticky stuff that calls every ant in the neighborhood to our yard. But the hummingbirds like them too, so we wait until we just can't stand the ants any more and then we cut the bananas off and ditch 'em in the trash. If you want any banana trees, just drop me a note and I'll be happy to dig up a few and ship 'em to ya! The marlin was marinated in Cruz Bay grill rub and olive oil.
I made grilled rare tuna marinated in ponzu and olive oil too, but you've already seen the tuna a bunch of times. I made my mango-black bean salsa to go with the fish:

MB - You are freaking me out. I just finished having an almost identical dinner. Pork marinated in sesame ginger marinade and grilled, rice & green beans. I kid you not! It did not look nearly as yummy as yours but good nonetheless. All I can say is great minds, or is it crazy minds, must think alike

We went camping this weekend and while our meals were not ford porn worthy ( they didn't look great),we made a killer breakfast "pizza" and Beef Stroganoff in the dutch oven over the fire.
It was our first attempt at true campfire cooking and I was very proud of our efforts. We have a portable grill and a stove and the only thing we used was one burner to make coffee all weekend.
