First try at a Caribbean dinner party menu for our upcoming trip. Plantain wrapped snapper on a mango-habanero-wine sauce, with balsamic roasted asparagus and blackstrap rum pan-roasted shrimp (they'd be grilled at the villa, which would carmelize the shrimp more).

The side was from the Blanchards cookbook...black bean couscous salad. I used Israeli couscous because I was out of regular:

I made these Portobello Mushrooms from Kalyn's Kitchen. She adapted them from a recipe in Bobby Flay's Grill It.

I didn't grill, I baked them in the oven.

Kale, olive oil, apple cider vinegar (opt), salt - bake at 400 for ~10 minutes.

Becky, I'd love to have that snapper & shrimp recipe! I have the Blanchards cookbook, so I can look that one up. Never heard of Israeli couscous, then again, I've never looked for it. It looks nice and plump...a good addition to the beans & peas.

We were just on STJ and had the extreme pleasure of having Ted Robinson (Tage) cook for us in our villa!! I wish I'd taken more photos, but here is one of the appetizers we were afraid we would never have again: the avocado-asparagus-chicken eggrolls. Would highly recommend this for a special night.

Yum Maryanne!!

Margo, I didn't have a recipe for the fish, I just made it up. All I did was slice the plantains really thin. I seasoned the fish with lime juice, salt, and pepper, then wrapped it as best I could in the plantain slices. Then I pan seared it over high heat for two minutes a side, just to carmelize the plantains a bit. I finished it in a 400 degree oven for about 7 minutes.

I did not measure the sauce either. I used dried reconstituted mangoes (I would have preferred fresh, but could not find any ripe ones), half of a habanero pepper, some white wine, a splash of mango juice, juice of one orange, one lemon, and one lime, and salt and pepper, all blended in a food procesor and put through a food mill. Next time I might add some onion.

We went to Rumblines last week and the girls had a creamy thai coconut chicken soup that they love. So I figured I'd try and make it. They said that they couldn't tell the to apart other then the snow out side I'll try to take a picture when I have the leftovers
