BeachMan, we stayed at Caneel last October and it is true that they alternate which restaurants are open--one night it's Equator, the next Turtle Bay Estate House. At least once a week it's the buffet. My guess is that they can only do the beach/ruins dinners on the nights that the Equator kitchen is open because Turtle Bay is WAY on the other side of the resort.

Are you staying at Caneel or at a villa? If a villa, I think given that you can't make plans with Caneel in advance, that the in-villa chef would be your best option, because you could arrange everything in advance and not have to spend any of your precious vacation time planning.

One final thought: John and I went to Zozos for our 10th anniversary and they did an excellent job.
It's like looking in your soup and finding a whole different alphabet.

We are in a villa and I'm leaning towards something that can be planned in advance and can be moved/held indoors in case of inclement weather.
Great ideas from everyone...keep 'em comin'!
