Lex, the ladders will be drilled into the rocks to make it easier to climb out. It's not as bad as it sounds. I've done quite a bit of shore diving in places that weren't sandy beaches. In Bonaire (where most diving is done as shore dives, not boat dives. Snorkeling is great there, too.), the most challenging entry/exit started by doing a "giant stride" off an ironshore (rocky) cliff that was about 4' over the water. When we finished the dive, we climbed out by taking off our mask & fins, hooking them over your forearm, and climbing a ladder that was drilled into the ironshore. It really wasn't as hard as I thought it would be. It was like jumping off a regular diving board, then climbing the ladder to exit a pool.
Nothingtolose, you can snorkel almost anywhere in Grand Cayman. Of course, there are some places better than others. Locals and dive masters around the islands know the best places. I prefer the East End area.
