We bought some fresh fish on island last year and marinated it in olive oil, soy sauce, the zest and juice of a lime, and some Cruz Bay Grill Rub.

The exact amount of each ingredient happens to be on the back label of the CBGR bottle.

I actually made some of this Saturday night with some fresh mahi-mahi!

Pete and Marcia -

I have no good ideas on grilling, but I would be willing to invite myself and my husband over to do a sample tasting of any of the above mentioned items (and any good ones that follow my post...). We will sacrifice our time and tastebuds to make sure your vacation goes smoothly.....

That sounds like an excellent idea. But, how about we wait until after we get back? That way, we will have had time to try out the recipes and there is a chance that the snow will be gone...a chance. (I still remember the year that it snowed in May.)

Do you have a grill on your boat? We don't, but I've always been tempted to get one at West Marine. Now that would be fun...floating and grilling at the same time! I have to work on that.

That beer can chicken thing confuses me. You put the half full can of beer, filled with spices and such, inside the chicken cavity standing up? That's got to be one big bird unless you are lucky enough to have a grill that will allow you to stand the bird on his/her legs while being grilled but somehow, that seems a bit precarious...won't said bird maybe fall over? Someone needs to post some pictures so that I can get a better visual.

On a related note, Pete and I have not ever had good luck with the poultry at Starfish. Are we alone on this? On more than one occaision, we've literally thrown away entire dinners because the meat was horrid. (We are not that picky, either) Is there someplace else we should be getting our chicken? I don't want to invest in an afternoon of cooking beer chicken and end up tossing it over the railing.

p.s. the chicken we've purchased at Starfish was not in the deli area, it was in the regular meat area and frozen solid when we bought it.

Come to think of it, I don't get the whole concept of the beer can chicken thing. Is the advantage that the mixture in the can somehow infuses into the bird from the inside? Do you baste the outside of the chicken? And, the visual of the chicken impaling itself on the beer can is kind of obscene, don't ya think?

Besides RickG (who I think might of made this up to see if us yankees would fall for it)...has anyone else actually tried this?

No, you are not alone. I won't eat their chicken after a particularly bad piece. Even the frozen stuff looks pretty vile. Now if I think I am going to want to eat chicken, I bring down my own organic stuff frozen. But, mostly we eat fish.

If you don't want to bring food, what about checking on St. Thomas? Marina Market is right by the Red Hook ferry--maybe their poultry is better?

The pork chops were really good a reasonably priced at Starfish when we were there in June, but I am sure it is hit or miss.
We grilled them with BBQ sauce and they were really good and simple.

I was given a recipe for this some time ago. It was called "Beer Butt Chicken" :lol: . I just used beer and an herb rub, but I like the idea about putting herbs in the beer can. It did turn out excellent.
Going "home" again October 26th!

Beer can chicken. Coat the chicken w/ a mixture of paprika, kosher salt, pepper and sugar. We use 1/2 can of beer - add some barbeque sauce to it. place the beer can inside the chicken - so that the chicken is standing up - grill over low/medium heat (standing on the grill) for about 2 hours- this is great everyone will love it!!

We've done the beer can chicken too with the herbs in the can of beer. Pretty tasty and the chicken is basically able to stand because of the can!

Pete & Marcia, I've done the beer can chicken thing a couple of times and I'm not sold on it. I started grilling Thanksgiving turkey many years ago, but started injecting them with beer/butter marinades a few years back , with great success. So, I'm a little slow, but eventually I fiqured if injecting turkey works to improve flavor and moistness, why not chicken? So now I make a quick marinade on the stovetop with beer, butter, garlic powder, salt, pepper and then inject it into the chicken. Sometimes I do a vinegar based marinade. I found that it gave pretty much the desired effect of beer can chicken, only better. Also, it didn't look like I was doing perverted things to dead birds.
