Great looking food!
Sorry we didn't make it. My son had his fishing boat, a beautiful day and a friend to share it with so his priorities changed.
We will HAVE to plan another Wisconsin/Illinois forum party next summer when all can attend. You and Tom could have a cook-off!![]()
congratulations on your success there!

I'm up for a forum cook-off! If it's just Tom and me at least I know that I can't do worse than second place

The conatiners are the standard for turn ins for the Kansas City Barbecue Society (KCBS), the body who sanctions the competitions that I cook in, as well as several other sanctioning bodies. That way everyone is working with the same pallet so to speak. The food isn't in there that long. We have a 10 minute window to turn in the food so as soon as we put the food into the box I run it to the turn in station (OK... I actually walk brisklymbw1024 wrote:I have to ask you something. I watch a lot of cooking competitions on TV and I always wonder what is up with the styrofoam containers. It seems to me that closing things up in there creates a lot of steam and could impact the final product. Is that not the case?

Appearance is only one of the scoring areas, and it is weighted the lowest. Taste is the highest weighting followed by tenderness. Each score is 1-9 and then multiplied by the weighting factors. The chicken received 8's and 9's for appearance, everything else received 7's and 8's.
