Regarding the safety factor, just heed the advice given on this forum. Don't go walking down any dark streets and you should be fine.

I am a solo female traveller and have been on the streets of Cruz Bay as late as 12:30 AM and I have felt safe. There are people around, taxis etc. I don't go off the beaten path once darkness hits.

I think you might like bar at La Plancha del Mar in Mongoose Junction mall, plenty of parking and very classy environment.

I think you will have fun no matter where you end up but you have so many great choices... I love to hear everyone's personal preferences!
