Bridal Luncheon Cake

I love the idea. I might just do (sorry to say) a boxed mix if I do this. Honestly, I could not bake my way out of a box. Cooking yes, sauces, hell ya. Baking? Not good.Carolyn wrote:Marcia...how does Vicki's idea sound?

I am a baker and I like that idea.
Once upon a time I did wedding and all occasion cakes. I don't do them anymore. It's a ton of work and you really need to be set up in a certain way to produce them. I still bake , just not specialty cakes. I can give you recipes, but you need to decide how much work you are willing to put into the project.
Believe me, not very many bakeries, bake from scratch. VERY FEW DO! I did, and have many recipes, including a nice light, white cake that I could send you.
I think MaryBeth put it best...baking recipies can involve alot of steps, not always that difficult but you need to know how to perform the steps. Know when ingredients need to be room temp vs cold, etc...it all makes a difference.
If you want to stick w/ the angelfood idea...you've gotten some nice suggestions and I agree that it would need to be assembeled on site...it will be a more sensitive to temperature if you use whipped cream, so take care w/ that .
I am working now so will check back and see how you are coming along w/ other suggestions.

Crate and Barrel also has a cupcake stand that I love but I'm sure you can come up with stuff you have on hand already. The cake pedastals stacked are always pretty.

Marcia-what shape is the cake plate? I would line the cupcakes up to cover the plate and then ice them decoratively as if they were a whole cake. Like spelling out Best Wishes with one letter on each cupcake in the middle of the group and then putting flowers, vines or polka dots or whatever on the surrounding cupcakes. Then you could grab some fresh flowers and stick them around the base of the tray or use your charms.
We did a baby shower cake out of cupcakes and lined them up in the shape of an umbrella and then iced them as if they were one cake. It was huge hit!

Then you could grab some fresh flowers and stick them around the base of the tray or use your charms.

There really isn't a reason to bake from scratch unless you like to do so. I would stick w/ a name brand and pick a flavor that makes you happy. If you go with the cupcake idea you can do different flavors.
Nics idea to use your serving piece is good...the flowers could dress up the most simply decorated cupcakes so that would make a nice presentation.
This is the best butercream recipe I have ever worked with:
1 lb unsalted butter
5 c 10x sugar
2 c heavy cream
1 T vanilla
Cream butter and 10x w/ flat paddle med/low speed 2 minutes/Scrape bowl
Increase speed to med/hi 2 more minutes/Scrape
Reduce speed to med/ gradually add 1 c cream/continue at med 1 minue/scrape
Mix 1 T vanilla into the remaining 1 c cream
Gradually add to the frosting then increase speed to medium and beat 10 minutes.
It will become light and fluffy and DELICIOUS!!!! Use it to decorate at this point.
You do need to have a stand mixer to pull off this buttercream.
It will get hard if you refrigerate the finished product due to the butter...so allow the cake or cupcakes to sit at room temp before serving.

Back in the day, the charms were baked into the cake and each attendant would get a piece of cake with one in it. Mine are going to be put at base of the cake/cupcake tower :0 with ribbons attached in her wedding colors.

My cake plate is about 9" and round. It's crystal and has a 4" high pedestal. I'll need to have servings for 15 or so. The only ones getting the charms are the bridesmaids and other attendants, 10 in total. The ribbons will hang off of the side of the cake plate.Nic in KC wrote:What cute wrappers MB!

I really, really like the cupcake idea.
Actually, just got off the phone with the bride...she like the cupcake tower idea!!
Now, back to recipes...and, any advice on how to "tower" them...

Marcia...to tower them, perhaps you can find a larger platter or pedestal and use that as a base for your pretty crystal piece, then you would have 2 levels to display the cupcakes. If the larger piece is a pedestal you might drape a colorful cloth over it and your charm pieces/ribbons could lay on that...make sense?
My daughter just did cupcakes for a bridal shower. I found a cute $8 white cardboard cupcake tier holder at Walmart. It was in their bridal/Martha Stewart section. You could probably place it on the glass platter. It held 24 regular size cupcakes I think.I remember 22 were coming to the shower since I made the chocolate seashells for the favors
