Everything looks so wonderful !

Here are some Superbowl snacks. (Or Scrabble snacks, as that is what I was doing during the game...)

And yes, I've been having the IMG issue as well. It says copied, but it's not. Thought it was just me and my iMac having the issue.

My first post here on food porn. I spaced out on taking a picture but this soup I created was to die for. Here is the recipe:

SWEET POTATO & CHICKEN SOUP

Yield: 12 servings


5-6 large sweet potatoes, peeled and cut into 1” pieces
8-10 large carrots, peeled and cut into 1” pieces
1-2 sweet onions, quartered
4-5 celery stalks (do no cut, will pull them out later)
32 oz low sodium, fat free chicken broth
1 whole (or more) rotisserie chicken meat
1 qt fat free ½ & ½
1# bacon, cooked and crumbled
Curry powder
Black pepper
Fresh chives, chopped

In large stockpot, put sweet potatoes, carrots, onions, celery, chicken broth and water to cover. Boil at least 30 minutes or until potatoes and carrots are soft. Drain and RESERVE the liquid. Remove and discard the celery.
In small batches, put potatoes/carrots/onions in food processor and puree until smooth. Return to the stockpot. Add reserved liquid, chicken, half and half and bacon. Season to taste with curry and pepper. Simmer at least a half hour. Serve with chopped chives sprinkled on top, if desired.

I'm going to make that soup; sounds great.

Maryanne, thanks for the idea. You know in the summer I am always cooking up the tomatoes from the farmer's co-op. I have added tuna in the past, but clams sounds like a WONDERFUL idea.

Spring can't get here soon enough. I'm not eating enough veggies right now.

clams are wonderful in a bolognese ! I also added some poblano pepper to that mix, and when it was soupy, some fresh parm = regg....

I bought all the ingredients to make Marcia's soup. It sounds like just the thing for the weekend!

been doing some cooking today.
made this brown rice/mushroom casserole that was really good.

marinated chicken with lemon juice, a glug of olive oil and some CBGR which I grilled on a grill pan. Served it with a balsamic and creole mustard reduction. It was kickin with good flavors!

and this crisp for dessert. it's a lot like the dump cake I think but with fresh blueberries (mine were frozen fresh over the summer).

mbw, what's the brown rice/mushroom casserole recipe? That looks wonderful. Probably not on our diet but, we can splurge from time to time.

Actually I think it meets your criteria. I used light sour cream and a 1% cottage cheese. Next time I'd go with small curd though. I forgot to specify when Charlie went shopping :)

Thanks Mary Beth. Was it as good as it looks? And, you are right, it's pretty much in there with where we are in this "phase" of the diet. :)
