Slow Cooker/Crockpot recipes??
Anybody have any tasty recipes for a crockpot? I always have good intentions of using it to help simplify things, but I haven't found too many recipes that produce anthing that great. The best thing to come from my crockpot was a turkey chili that was great. I can post the recipe later.

I like to make stew. If it is beef Iuse about 2 lbs of stew meat. 2 or 3 bags of frozen stew veggies. 1 can of tomato paste a package of Liptons beefy onion soup mix a couple of bay leaves some black pepper. put it all in slow cooker cover with water and cook for 10 to 16 hrs remove bay leaves and thicken with corn starch.
For pork I change liptons to herb and garlic and the tomato paste to a can of cream of mushroom soup.

I'm with you, I love the idea of using the crock pot, but never seem to find recipes that I love. Most use "cream of something" soup, and turn out way too salty for me.
I have 2 standbys though.....pulled pork is one of my faves. Take a pork loin/butt, season it, put it on low with a bit of your favorite bbq sauce. When it's done and tender, drain most of the liquid, shred with a fork, mix in bbq sauce to your liking, and let warm up over low. great for sandwiches.
Also like to put chicken breasts in, season with a tiny bit of taco seasoning, add in a bit of salsa, and cook all day. Shred when it's done for really good tacos. Also good if you add in some pepper/onion strips.

I do a Pulled pork as well.
I cover a pork roast or loin with coarse ground mustard and sliced onions and cook on low for about 8 hours. Then drain off the liquid, shred and add my favorite BBQ sauce and voila, dinner is done.
Sometimes I add potatoes into the crock pot. I take them out when I drain the liquid off and pop them into the oven at 475 while I am shredding the pork.

Our favorite slow cooker recipe is Ropa Vieja (Spanish for Old Clothes). It's a little on the spicy side. It's easy to make.
1 can (14 1/2 oz) diced tomatoes
1 tablespoon capers, drained
1 tablespoon ground cumin
1/2 teaspoon ground cinnamon
1 teaspoon salt
3 minced garlic cloves
1 large red pepper, sliced
1 large yellow pepper, sliced
1 can sliced jalapeño chiles
1 onion, sliced
1 beef brisket (about 3 pounds)
Warm tortillas and/or rice (optional)
In a slow-cooker bowl, combine tomatoes with their juice, capers, cumin, cinnamon, and salt.
Add garlic, peppers, jalapeños, onion, and brisket. Stir to coat brisket and vegetables with tomato mixture.
Cover and cook for 9 to 10 hours on low or 6 to 6 1/2 hours on high.
Remove brisket and shred with two forks with the grain into fine strips.
(This is why it's called old clothes.) Serve mixture with tortillas and/or rice if you like.

I use about the exact same recipe for mine. To serve it, I toast french bread, then pile it with beef, mozzarella, then pop it in the oven to melt for a couple of minutes. As a working mom, I love the slow cooker. It's great to have a meal ready at the end of the day. I'm also happy to see these recipes, because it seems like an alarming number of the recipes in my slow cooker cook book call for a pound of Velveeta. Ugg! But I've tried several things including steel cut oatmeal, chili, ribs, roasts, fruit compote and even a cake.
My family loves pot roast: brown a couple pounds of cubed beef, add to cooker with peeled carrots, onions, whole small potatoes, celery. I cheat and use the packets of slow cooker seasoning from the store, mixed with water.
Chili: 2 pounds ground or cubed beef, browned. 1 14 oz. can diced tomotoes (don't drain); 2 cans red beans (don't drain); 2 cans black beans (don't drain); 2 packets taco seasoning. Cook low 5+ hours. Actually I like it better the next day.

Thank you all so much for your responses. I, too love the idea of the slow cooker. Nothing like coming in from work to the aroma of dinner!! I just don't really like all those recipes with cream of this or that or a pound of velveeta for that matter!!!! (I've never seen those!!) I don't normally cook like that, so it's not appealing to me, even if it makes life simpler. I will definitely try some of the posted recipes.....and keep them coming!
