Creme Brulee Question
My daughter just asked me if I would make creme brulee for tomorrow's French class. Needless to say, I don't have 25 ramekins. Has anyone ever prepared this in a souffle dish? Thanks.

Yum...creme brulee, my third favorite dessert!
I've made a giant creme brulee before, in a corningware dish that is 12" round and about 1" high--filled about halfway up with custard. That size dish gives you the right ratio of custard to crunchy top. I think I got 10-12 servings out of it. Do you have something like that you could use?
Remember, too, that the crunchy top will get soggy after a couple of hours. Also, will she have a place to keep it cold at school?

Thanks, Liamsaunt! I'm pretty sure they do have a fridge, and she knows how to use the micro torch if needed. It will be easier to use the larger dishes you mentioned rather than trying to round up 25 ramekins. I was afraid it wouldn't bake properly, then I'd have to start over again. I don't have time for that, plus I would hate to waste it all.

Pjayer, your daughter sounds like mine! She always has suprises like that, or like "Mom, I voluteered to have our Wyldlife group over for breakfast before school." I'm having trouble keeping up with all of this end of the year stuff. Of course I've got St. John on the brain, which is a constant distraction.

Creme brulee mission accomplished! I managed to come up with 25 ramekins yesterday, got them baked last night, carmelized them this morning, and sent them off to school with the daughter.

kygirl - I gave serious consideration to your offer, but knew I'd be up way past my 10 pm bedtime if I drove to Lex. Plus at $3.99/gallon for gas, I'm not sure I can afford creme brulee ingredients and a road trip.

I've already picked everything up, and there was only one left. And nothing came back broken. Hope they don't think up anything similar before school's out in 5 days!
