Donkey Diner Tofu Scramble Recipe-?

Good morning!
My Sweet Amy has a birthday in a few weeks, and her favorite breakfast on our trips to STJ was the tofu scramble at DD. Gonna' try to cook it up for her...
Anyone know what the heck was in it?
I love to cook, but never tried tofu cooking...

Add tofu at the very last minute, it will soak up moisture and if cooked to long will break apart.....

I forwarded your question to the last owner of DD, Michael A Brouwer, here's his response:

Tofu is marinated in herbs and spices and Pomace Olive Oil...NOT Extra Virgin. Flash sauté with vegetables on high heat.
