Favorite villa dinners
What does everyone like to cook for dinner when staying in at your villa or condo?
I want simple but tasty ideas. I was thinking about grilling a fresh fish of some sort one night, maybe burgers, pasta.

Staying in Coral Bay, unload, swing down Sea Grape Hill
to Skinny's. Ajax, swing by Uncle Joe's on the way up to villa for a great take out! We always have good intentions about cooking dinners at the villa but it never seems to happen! Last year in Coral, we did do spaghetti one night. Capt. Dan and Ruby brought freeze dried sauce (really good)! Aqua Bistro kept calling us for 4 nights out of 7. Amazing food, fun chef!

My go to easy villa meal is to grill a piece of fish or chicken and serve it on a bed of Josephine's greens with a simple lemon vinaigrette, with tomatoes if I can find them, and some sliced sweet onion. You can get her greens at Starfish, or if you are out in Coral Bay, just go to her farm. We eat a whole lot of her greens every day. I love her arugula best for dinner, and I use her microgreens for brunch (topped with a poached egg).
Leftover chicken/fish makes a great lunch the next day served chilled with more greens as a salad.

We only have villa meals once in a while. We don't like to spend much time cooking, but it is nice to come back to the villa after a day at the beach and just enjoy the evening there, especially since we had wonderful views. Our favorite villa meal is to buy Cruz Bay Grill Rub and make the marinade recipe on the bag. We make it one evening, put it in a ziploc bag, throw in some pork chops or chicken, and let it marinate all the next day. At dinner time the next day, we grill them. Yummy!
A quick and easy dinner is to get a rotisserie chicken from Starfish, and some side salads from the deli. (We had some type of curried rice dish that was great.) Then we can eat at the villa, just need to heat things up. Just don't leave the chicken out on the counter - millions of ants will find it immediately, as experienced by some forumites.
Sometimes we have our main meal at a restaurant around 2 or 3, after snorkeling several hours. Then in the evening, we have cheese, bread and fruit. Its not for everyone, but ok with us.

I think we are going to dry the spaghetti sauce this year agian. We just make the spaghetti with meat sauce the way we do at home. ( we bought a cheep dehydrater at Bed Bath and Beyond... the round kind), lined the trays with foil and laddled in a thin layer of sauce. About 3-4 hrs later, we cooled the dryed sauce and bagged it in vacuum sealed bags. We chose to mail it in our box with the sunscreen. We rehydrated it with hot water and a little wine. It turned out really good. A little different than fresh, but good. Meals like that make a meal at the Aqua Bistro possible.

We are cooler people and bring lots of meat so we tend to grill alot. Throw in a salad and a side of something, usually something packaged like those Lipton sides or Zatterans sides and there ya go easy peezy. You are now watching a beautiful sunset on your veranda eating a great meal with your favorite beverage of choice. I have to say though my all time favorite is Tatertot casserole, gawd I luv that stuff.

Easiest villa meal Spaghetti with meat balls and homemade sauce- Spaghetti made with meatballs and sauce that was prepared at home and frozen. We bring spaghetti and simply pick up some fresh baguette, garlic and butter and viola! Home made spaghetti with garlic bread in minutes.
Favorite villa meal Fajitas - I slice and marinate flank steak at home for Fajitas. I have experimented with the freezing process but I have found that the sliced meat can be frozen in a bit of it's marinade and keep well. I grill the meat and we pick up tortilla's, cheese, peppers, sour cream, salsa.

Our favorite villa meal that we do each visit is getting about 4 or 5 seafood items (shrimp, scallops, various fish) in "small plate" quantities. Using different spices from St John Spice on each we cook them on the grill, one item at a time, over about a 3-hour period. We lounge in the pool and do blender drinks and/or wine between each small plate course. Simple, tasty, fun & relaxing.
