Outdoor concert food ideas?

am going to Prairie Home Companion in 2 weeks and I am in charge of food.
There will be 4 of us; 1 non meat eater and one no seafood.
Everyone is a Lifetime WW member

This is what I made last year:
Ina's Roasted Shrimp Orzo Salad (1 with no shrimp)
Hummus and roasted pepper roll ups in Spinach tortillas
Fruit and cheese
Tomato, basil, mozz skewers
Cold Beef tenderloin on crustini with goat cheese

I want to come up with a totally different menu this year. Any suggestions?

I have been wanting to make a green bean and potato salad. Small new potatoes in a vinaigrette type dressing. Does that do anything for you?

That does sound good but I have tried before without much success. Do you have a good recipe

For picnics I like Ina's Pasta Pesto and Peas:

I also usually make a vegetarian pan bagnat, it is easy:

hollow out a loaf of crusty bread, any kind you like. Brush both inside pieces of the bread with olive oil and drizzle on some balsamic vinegar. Fill the bread with sliced tomatoes, roasted peppers, sliced fresh mozzarella cheese, coarsely chopped olives, basil leaves, arugula (optional), thinly sliced onion (optional). Sprinkle with salt and pepper, and close the sandwich. Wrap the sandwich tightly in foil and weight it down with something for a couple of hours to mingle everything together.

I would also bring a big bowl of chopped watermelon and/or sweet cherries.

Oh, one more. Ina also has a recipe for a sandwich with sliced beef tenderloin, arugula, shaved parmesean and truffle butter that John goes crazy for. I can't remember exactly what the recipe is called so I can't pull it up on the food tv site, but if it sounds interesting to you I can type in the recipe when I am home. It was in her "cooks at home" book. Here's a picture (the ones on the right are vegetarian--with brie instyead of beef)

no I don't. I was going to google something or just make it up as I go :)

For picnics, I have done sandwiches similar to the ones in Liamsaunt's photo. I have made BLTs with really good thick bacon, argula, tomato and homemade mayo. I have also done buffalo mozzerela, basil, olive oil and balsamic vinegar.

I especially like Ina Gartens use of paper chinese food containers to indiudually serve the pasta and pea salads

I have those and use them every year. My local chinese restaurant was happy to sell me an entire sleeve for supe cheap. I love them. Ina is one smart cookie!

This the menu, I came up with:

Becky's vegetarian pan bagnat

AUnt Nydia's Italian Salad
-Romaine, walnuts, bowtie pasta, fresh parmesan with a light lemon vinaigrette

Toasted Israeli Couscous Salad with Grilled Summer Vegetables

Mini Chicken BLT's

The kitchen challenged guests are bringing fruit, cheese, wine, and dessert....although I am thinking of making some sort of fruit bar. I am not a fan of store bought dessert

Just FYI I made the salad above and it was a big hit at the dinner table tonight. Charlie and his dad give it 2 thumbs up!
