Miss Lucy's sweet potato stuffing
Does anyone have a recipe for sweet potato stuffing similar to what is served at Miss Lucy's? Or know if there is one in the food porn thread.(That thread is up to 110 pages....wow..it could be it's own forum.)

Are you talking about the sweet potato thing that comes on the Friis Bay platter? I've tried to replicate that at home myself a couple of times. What I do is roast sweet potatoes, peel and mash them, stir in butter, cinnamon, allspice, salt and raisins that I plumped up in warm rum. I don't measure anything so I can't be more specific than that. It tastes pretty similar.
It's like looking in your soup and finding a whole different alphabet.

Actually, potato stuffing is not made with yams...sometimes you see it done with a few of the local sweet potatoes, they are purple and white on the outside, and absolutely delicious! But, anyhow, found this recipe online... I don't like the raisins, so I leave them out. If you search for "West Indian Potato Stuffing" you can find another recipe submitted by Shipwreck, but this one is more traditional (just omit the veggies if you don't care for a particular one):
6 medium potatoes
1/2 teaspoon salt
1/4 cup milk
1/2 cup minced onion
1/8 cup minced celery
1 tablespoon finely chopped parsley
1/2 teaspoon thyme
1/4 cup each red and green bell peppers, minced
1/4 cup tomato paste
1/4 cup ketchup
1/4 cup sugar
1/2 teaspoon cinnamon
1 cup raisins
1 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon hot pepper
Peel and cube potatoes. Boil in 10 cups of water with 1/2 teaspoon salt until potatoes are very soft. Mash potatoes well, adding salt and milk, and make sure there are no lumps.
In a blender, blend the green and red bell peppers, onions, celery, garlic and thyme with 1/8 cup water until fine.
In a sauté pan, cook this mixture with tomato paste, ketchup and raisins. Simmer for about 5 minutes, and then add to mashed potato mixture. Add pepper, cinnamon, sugar and salt to taste.
Mix completely and place in a baking dish. Bake at 350 degrees Fahrenheit for 30 to 40 minutes. Stuffing is done when top is lightly browned.
Makes 6 servings

I'm with you...I don't like yams, but really love this potato stuffing. Everybody makes it a little bit different, but I would say it's safe to say that most people use just plain 'ol potatoes. If you get a chance, try the local sweet potatoes. They sell them at all the markets. They are purple and white. Just throw them on the grill and let them roast. They are delicious!
